Featured this week - Black Cod, also known as Sablefish! Harvested in Alaska, one of the best managed fisheries in the world. Sable are harvested using both longlines and pots in very deep ocean waters. The Food & Wine Guide to Sourcing and Preparing Each Type of Crab Marylander Julekha Dash knows blue crabs well. She shares when to source the delicacy and how it's traditionally prepared and talks to other regional experts about the main kinds of crabs we cook with and eat: blue crab, snow crab, king crab, and stone crab.
Florida Pink Shrimp (Farfantepenaeus duorarum).
Often referred to as one of the tastiest shrimp found domestically. These shrimp have a snappier, sweeter bite to them, with a hint of salty brine on the backend. They grill up well and pair best in dishes that feature delicate sauces and flavors.
Theyhave a year-round open season. However, we don’t often see them until at their peaks in the early Spring and late Fall in the Gulf of Mexico. Enjoy these nutritious and delicious ocean treats while they’re here!

It's Chilean Sea Bass Tacos with Avocado Crema! Any excuse to celebrate, cook and try this delicious fish: Cinco de Mayo is in two weeks!
Taco:
1.) Chilean Sea Bass Strips
2.) Tortilla
3.) Red Cabbage
4.) Onions
5.) Cilantro
6.) Avocado
7.) Lime
Taco Seasoning:
1.) Chili powder
2.) Garlic Powder
3.) Cumin
4.) Paprika
5.) Oregano
6.) Salt
7.) Pepper
Crema: Mix everything in blender. Add garlic or whatever your heart's desire!

These are called soft shell clams. Adults can only move vertically and cannot bury themselves again if removed from their burrow. Fun fact: when disturbed, they shoot out water from their siphon. And unlike other clams, they cannot completely retract their siphons into their shells.
Soft shell clams have a salty and briny taste with an underlying sweetness. A cool and tasty recipe to try is Beer Steamed soft shell clams with garlic butter as your dipping sauce! Yum!
Beautiful Golden Tilefish! Colorful and sometimes known as the clown of the sea. They are easily distinguishable from other members of the tilefish family by the large crest on their head. Their diet consists of shrimp, crabs, snails, and clams.
Golden Tilefish's flavor is delicate and sweet. Similar to lobster or crab. Low in fat and sodium. They are a good source of niacin, phosphorus, protein, B12, and selenium.
One delicious way to prep Golden Tilefish is Pan seared with white wine reduction. How would you cook your Tilefish?
