ST. LOUIS STYLE PIZZA

My brother Pete & I have an old school style that we put forth at our pizzeria daily. It begins with the way we cook & prepare our pizzas, as well as the way we do business. Let me begin by giving you a brief summary on how we do things at Faraci’s. We only use 100% Provel Cheese that we hand slice. This allows the cheese to melt evenly across the pizza, giving each slice of pizza just the right amount of delicious cheese. Our grated cheese is imported Romano, which we feel enhances the spectacular flavor of our pizza. We make our own pizza sauce completely from scratch. We carefully select all of the ingredients used in the 5 hour cooking process, from our tomato products to all the spices.

We also make our own dough, which takes 3 days before it can be made into a pizza. On day 1 the dough is made, covered and allowed to rise several times. The 2nd day, the dough is cut into sections, hand weighed and rolled into doughballs and set for the following day. On day 3, the dough is finally ready to be made into a pizza.

Pete & I are very proud of the high quality of meats we offer. Let’s start with our Italian Sausage and Beef. We buy the pork still on the bone a “Super trim Cut” which means it has the least amount of fat. Our Beef is 99% lean and also comes in slabs. We bone, slice and grind our meats and mix in our blend of seasonings for our signature toppings. We pre-cook our Hickory Smoked Bacon and drain off any excess oils so it is crispy and not greasy. We also make our own Meatballs and our incredible Italian salad dressing. All of these recipes come from our Grandmother “ NONNA” and date back to the early 1900’s.

As you can see, we put a lot of pride into making our pizzas. And each pizza is made to order with great Passion and Love of our trade. Lastly, we cook every pizza in a Brick Bottom Oven this takes time and patience, but produces a crispier crust. So when you come for a visit, please understand if you have to wait a little longer, it’s the extra care, love & preparation put into each pizza that makes it a FARACI PIZZA :) Since 1968
