White Bean Panzanella
-1 (15-ounce) can cannellini or great Northern beans, drained and rinsed
-2 cups loosely-packed arugula
-1/4 medium-sized red onion, sliced
-2 tablespoons extra-virgin olive oil
-1 tablespoon apple cider vinegar
-1 fresh clementine or small orange, peeled and diced
-Kosher salt & freshly ground black pepper, to taste
-Pinch of crushed red pepper
-8 ounces stale sourdough bread, cubed and toasted
Combine all ingredients in a large bowl (except bread cubes) and refrigerate for at least 30 minutes or up to 2 hours. Toss in bread cubes and serve.
makes 2 to 4 servings
