Recipe of the week: "Cucumber Sandwich"

Ingredients:
2 ounces cream cheese, at room temperature
1 tablespoon low-fat plain Greek yogurt
1 tablespoon sliced fresh chives
1 tablespoon chopped fresh dill
ยผ teaspoon ground pepper
2 slices whole-wheat sandwich bread
โ…“ cup thinly sliced English cucumber

Directions:

Step 1:
Stir cream cheese, yogurt, chives, dill, and pepper together in a small bowl until well blended. Spread the mixture evenly on one side of each bread slice. Top 1 slice with cucumber slices, then top with the other bread slice, cream cheese-side down. Cut the crusts from the sandwich and cut it in half diagonally.

Recipe of the week: "Spinach & Feta Frittata"

Ingredients:

8 large eggs
ยผ teaspoon ground pepper
ยผ teaspoon salt
1 teaspoon extra-virgin olive oil
4 cups baby spinach (half of a 5-oz. bag), chopped
ยผ cup crumbled feta

Directions:

Step 1:
Preheat oven to 400ยฐF.

Step 2:
Whisk eggs, pepper and salt in a large bowl.

Step 3:
Heat oil in a medium ovenproof nonstick skillet over medium heat. Add spinach; cook, stirring occasionally, until wilted, about 3 minutes. Add the egg mixture and sprinkle with feta. Transfer the pan to the oven.

Step 4:
Bake until the frittata is set, about 10 minutes

Ingredients:
4 hard-cooked eggs, peeled and chopped
ยฝ cup mayonnaise
1 teaspoon curry powder
salt and pepper to taste
8 slices bread

Directions:

Step 2: Mix together mayonnaise and curry powder in a bowl. Gently stir in eggs, then season to taste with salt and pepper.

"Fiesta Slow Cooker Shredded Chicken Tacos"

Ingredients:

1 cup chicken broth
3 tablespoons taco seasoning mix
1 pound skinless, boneless chicken breasts

Directions:

1. Combine chicken broth and taco seasoning mix in a bowl.
2. Place chicken in a slow cooker. Pour the chicken broth mixture over the chicken.
3. Cook on Low for 6 to 8 hours. Shred chicken.

To Use:
Spoon into warmed corn tortillas. Garnish with shredded lettuce, chopped tomatoes, and thinly sliced red onions, if desired.

"Salad made with salmon and dressed in a flavorful sesame sauce"

Ingredients:

For the salad:

250g new potatoes, sliced
160g French beans, trimmed
2 wild salmon fillets
80g salad leaves
4 small clementines, 3 sliced, 1 juiced
handful of basil, chopped
handful of coriander, chopped

For the dressing:

2 tsp sesame oil
2 tsp tamari
ยฝ lemon, juiced
1 red chili, deseeded and chopped
2 tbsp finely chopped onion (ยผ small onion)

Method:

STEP 1
Steam the potatoes and beans in a steamer basket set over a pan of boiling water for 8 mins. Arrange the salmon fillets on top and steam for a further 6-8 mins or until the salmon flakes easily when tested with a fork.

STEP 2
Meanwhile, mix the dressing ingredients together along with the clementine juice. If eating straightaway, divide the salad leaves between two plates and top with the warm potatoes and beans and the clementine slices. Arrange the salmon fillets on top, scatter over the herbs, and spoon over the dressing. If taking to work, prepare the potatoes, beans, and salmon the night before, then pack them into a rigid airtight container with the salad leaves kept separate. Put the salad elements together and dress just before eating to prevent the leaves from wilting.

Crunchy Summer Salad with Creamy Avocado Dressing

Ingredients:

Dressing:

1 small avocado
2 tablespoons umeboshi vinegar (see Tip)
2 tablespoons lemon juice
2 tablespoons olive oil
2 teaspoons chopped fresh dill
1 teaspoon snipped fresh chives
1 teaspoon pure maple syrup
ยผ teaspoon garlic powder
ยผ teaspoon ground pepper
ยฝ cup water, plus more as needed

Salad:

ยฝ pound asparagus, trimmed and cut into 1/2-inch pieces
1 (15 ounce) can chickpeas, rinsed
3 cups shredded red cabbage
ยฝ pint cherry tomatoes, halved
1 ยฝ cups fresh corn kernels (about 2 ears)
5 radishes, thinly sliced
2 romaine hearts, cut into 1-inch pieces
1 avocado, chopped

To prepare dressing: Halve and pit avocado. Scoop the avocado flesh into a blender. Add vinegar, lemon juice, oil, dill, chives, syrup, garlic powder, pepper and water. Puree until smooth, adding 1 to 2 tablespoons more water if it seems too thick. (Makes about 1 cup.)

Step 2:
To prepare salad: Bring a large skillet of water to a simmer. Add asparagus and cook until barely done, 1 to 3 minutes, depending on the thickness of the spears. Drain and transfer to a bowl of ice water. When the asparagus is cool, remove from the ice water and dry thoroughly. Set aside.

Step 3:
Toss chickpeas, cabbage, tomatoes, corn, radishes, lettuce and the blanched asparagus together in a large bowl. Pour 3/4 cup dressing over the vegetables; toss to coat. Add more dressing if desired. Divide between 6 plates or bowls. Top each serving with avocado.

Tip: Umeboshi vinegar, aka ume plum vinegar, is the pickling brine from making Japanese pickled plums. Find it in the Japanese or Asian section of your supermarket or with the other vinegars, or online. Eden Foods is one widely available brand. If you can't find umeboshi vinegar, red- or white-wine vinegar or lemon juice would all work well as a substitute. Because the umeboshi vinegar is quite salty, if you substitute another vinegar or lemon juice, you might find the dressing needs a little added salt.
