Behind the Scenes: How Our Mac Salad is Made! ✨
Our mac salad is made fresh in-house daily, perfected by our co-founder Kalani after 7 years of testing. 👌🏽 We start by boiling the noodles, cooling them to the perfect temperature, then mixing in mayo, carrots, and secret spices and seasoning! 😉 Once prepared, the mac salad sits in the walk-in refrigerator for 10-12 hours to reach the ideal consistency for that perfect mac scoop! When we first opened, Kimo & Kalani made one batch every few days—now, we make up to 6 batches a day! Big shoutout to our amazing prep cooks for making our Mac Salad everyday!

✨Behind The Scenes: How our Kālua Pig is Made! ✨
Kālua Pig is usually served at a traditional Hawaiian Luau as the main attraction on the menu. Typically cooked in an imu, an underground steam oven, the process is a lot of work. Starting with seasoning the pig, digging a pit, laying down banana leaves, and carefully placing stones to hold in the heat. The pig then cooks in the pit for 8-10 hours, becoming incredibly tender... and incredibly delicious.
We honor this Hawaiian tradition with our Kālua Pig by rubbing in sea salt, adding a touch of liquid smoke, and slow-cooking it for 8-10 hours. Once it’s done, the Kālua Pig is moist, tender, and perfectly pulls apart, ready to serve. 🌺

When she’s not at Mo’ Bettahs, she’s spending time with her dog, friends, family, and her amazing husband. She also loves baking and cooking, always whipping up something delicious. From military rations to a favorite Hawaii staple, Spam Musubi is a beloved and popular snack, that is part of life in Hawaii and truly represents the melting pot of the different cultures living there.
You can often find Spam Musubi in kids' lunches and convenience stores across the 50th state. Nicknamed the “Hawaiian Energy Bar” for its portability, it originated during World War II when military men traded Spam with locals. Japanese locals added Spam to their traditional style making of musubi, giving rise to the iconic Spam Musubi. ✨
The classic Spam Musubi features fried Spam, sticky white rice, and nori (seaweed). Over time, variations like teriyaki Spam, Spam with egg, and chicken katsu musubi emerged. No matter how you enjoy it - Spam Musubi will always be a favorite! 🤙🏽
