As a young girl in high school we ate lots of spinach and eggs with cheese when we had lunch during detasseling season. It is still one of my favorites in a tortilla. Special morning, remembering my roots. Oh, and I grew my own chile pequin or chile del Monte. Called this because it grows wild in Texas.

A beautiful spinach con queso tort. Chives from my summer garden. Step 1 warm spinach, drain any moisture. Step 2. Mix in chopped fresh chives. Step3. Add cream cheese to warm spinach. 1 tbls. Butter.You can add 1 egg yolk or not. No salt. You can add Lemon pepper or lemon zest. Just a pinch.. Crumble queso fresco 1/2 cup mix a little.. Step 4. Place in pie crust on parchment paper, fold in edges in a circle. Ready to cook in the oven. Step 4. Bake in oven 30minutes on 400. Step 5. Cool and enjoy!
