If you've been around, you probably have seen these little beignet connoisseurs in tow. Collectively, they have probably enjoyed more beignets than most French Quarter residents do in a lifetime.

When we started this years ago, they all were pretty little. Now you'll see the bigger ones in the crew working with me quite a bit. Quite honestly, it is my favorite part of the gig.

This is "Birthday Week" for three members of the QCT - Ray (16 today), Imogene (6 tomorrow), and Elinor (12 next Thursday). A few of them are starting off their birthday celebrations helping out up here before the after (shift) party begins. 😆

Everything we do at The Dusty Biscuit is wrapped up in this crew. They have been excellent advisors, taste testers, and cheerleaders through all the ups and downs. So thank you to all who have supported us over the years, because all that sugar bread love trickles down to them.

Also, just for today (Friday) we are workshopping a new tater tot special. These Diablo Hot Honey Tots come with a ton of melted American cheese, diced jalapenos, and a housemade hot honey ketchup. They are an awesome mix of sweet, spicy, and cheesy goodness.

Y'all know we love our Dusty Cristo Sliders, but every now and then we get a hankerin' for an old school, big daddy, Bennigan's style Monte Cristo.

This is always one of our top requested pop-ups, so you know we do it up right. We take ham, turkey, Swiss, and American cheese on honey wheat bread, batter and fry it up, drizzle it with our maple glaze, toss on some chopped bacon, and dust it up with powdered sugar. It is then served up hot with our strawberry jalapeno jam.

My people...

You old heads know them at the Quality Control Team. They've tasted more beignets than many have had in a lifetime, but they always are effusive in their praise. Some of them remember the days before this beignet endeavor, but for one or two this is all they know.

Even in the darkest of days, these kiddos keep me in check. They tell me that they're proud of what I've done, which is so kind. Many of them have willingly jumped in on their own to help over the years.

One of my greatest joys of this current season is having at least one of the QCT with me on any given day. I started this five years ago in order to spend more time with family. With the pandemic challenges, it often didn't fall that way. But these days, I'm living the dream.

With kids like these (plus my amazing godsend of a wife), being a dad is pretty easy.
