Summer may be nearing the end, but the days are still warm and calling for light and refreshing snacks like these delectable cucumber and dill sandwiches! Assemble them in five minutes or less and have them ready to go to entertain or simply enjoy yourself on a sunny day!
Ingredients:
4 oz of Violife vegan cream cheese (softened)
1/4 tsp of dill w**d
1/4 tsp of garlic powder
1/4 tsp of pink Himalayan
4 pieces of Canyon GF multigrain bread
1/2 large cucumber (sliced two ways)
1/4 cup of chopped green onion
Directions:
In a small bowl, mix together the vegan cream cheese, dill w**d, garlic powder and salt. Then evenly coat two pieces of bread with your cream cheese mixture and top with cucumber and green onion and place the remaining two pieces of bread on top. Cut your sandwiches in halves of fourths and then enjoy! 🥒

Fruity, fizzy and fun mocktails are my jam and this summer I created a new, antioxidant, kid friendly beverage that is full of surprising flavors in each and every sip! Give it a try!
Blackberry Syrup:
2 cup or blackberries
4 tbsp of lime juice
4 tbsp of agave
1/2 tsp of cardamom
Pineapple Fizz:
4 cup of Blackberry flavored soda water (I use Bubbly)
2 cup of pineapple juice
Blend your blackberry syrup ingredients together in a food processor and then pour the syrup into the bottom of a tall glass and then set it aside in the fridge to cool. Then, combine the pineapple juice and soda water in a shaker and pour it on top of your blackberry syrup. Finish it up by adding a pineapple wedge and then enjoy!

Move over leafy greens! A new salad is trending! This summer salad is fruity, yet tangy and is the perfect light addition to a meal on a hot summer day! Watermelon has always been one of my favorite fruits of all due to its sweet taste and its natural source of electrolytes and fiber! Now, just toss in a little goat cheese for protein and flavor and finish off with a citrus dressing and its perfection!
Ingredients:
2 cups of diced watermelon
1 tbsp of white wine vinegar
1 tbsp of lime juice
1 tbsp of agave
1/4 tsp of ground ginger
1/2 cup of goat cheese crumbles
1/8 tsp of black pepper
A few mint leaves (for garnish)
Directions:
Dice up your watermelon and set it aside. Then, whisk together your lime juice, agave, ginger and white wine vinegar and then drizzle it evenly on top and then finish off your salad with a sprinkle of goat cheese, black pepper and mint and then enjoy! 🍉🥗

Summertime calls for lots of different cuisine and most especially, Mexican! In this vegan, one dish meal, you get your grains, your veggies, your protein and little bit of spice! Not to mention, who doesn't love how aesthetically pleasing stop light peppers are on a table spread? Whip these up in minutes for you, your family or a crowd! Enjoy!
2 cups of tri color quinoa / 4 cups cooked
1/2 cup of chopped white onion
2 tbsp avocado oil
1 15 oz can of organic black beans
1/2 tbsp of garlic power
1 tsp of paprika
1 tsp of salt
1 tsp or curry powder
1 tsp of thyme
1 tsp of ground cumin
6 bell peppers
Directions:
Pre heat your oven to 350 degrees. Then, start by preparing your quinoa according to the package instructions. Next, in a medium skillet, toss in and sauté the onion in the avocado oil and then sprinkle in the seasonings, quinoa and black beans, give it a stir and then cook on medium heat for 10 minutes. Lastly, stuff your peppers and bake them at 350 degrees for 30 minutes. Then, enjoy! 🫑🌶️
