Well, it's been a long few months. Lot's of working, not so much cooking and I'm paying the price. Tired, grouchy, bitchy and my face looks like hell...😳. I'll be getting back on track over the next few weeks. I can't wait to cook again!

With my crazy work schedule I haven't posted lately. Mostly because my meals have consisted of snacks and left overs. However, I made am amazing taco soup the other day. Think traditional taco meat with beef stock and cream cheese added... Yum to the 10th level! Add in taco chaffles (chaffles with taco seasoning) and I was in heaven.

Dinner also consisted of Reuben stuffed calzones. Very tasty just have to tweek the dough past as it was a little dense for my liking but the family enjoyed it, so I'll take it as a win.

Made cheddar meatloaf chaffles today. I stil have done off the mixture left and think I'll cut down on the cheese for the next batch. The guideline (recipe) said to put a piece of cheese on the top and bottom of the mallet but it made a horrible mess. The flavor was spot on though. Definatly adding this to my rotation.

Dinner last night was amazing. Chicken, spinach alfredo casserole over spaghetti squash topped with Italian cheese blend. Sooooo good!

I also packaged up some premixed nuts. 2 oz. of nuts was also 4 carbs. I love just bringing it to the simple level for those hectic days.

I made a couple grab and go snacks. Trail mix, pepperoni crisps and cheese its... Each 1/3 cup of trail mix is only 4 carbs, 16 pepperoni crisps are only 1 carb and, well, cheese is life! I think I might try the trail mix as a "cereal" with some cashew milk... maybe.

Breakfast was super simple. Made a basic chaffle with seasonings I wanted, fried up an egg and sausage patty add in cheese and I was stuffed after half.

Tonight was leftovers. Basically took the chili I made a few days ago, BTW - it got spicier! 🌶🌶🌶🌶 and made it a casserole with cheese and cheddar hot dogs. All within our carbs for the day.

Made an amazing Keto chili tonight. You can use any combo of peppers. From left to right - (can't remember the name of the scrunched up once, sorry), jalapeno, Anaheim, poblano and the orange one is habanero. I also added 10 or do cloves of fresh garlic, 1 medium yellow onion, half a red onion, 2 cans of rotel diced tomatoes (1 hot chili, 1 fire roasted pepper) 1 large can tomatoe paste and 1 small. The meat is 2 lbs of Hamburg, 1 pound hot sausage and 1 pound chorizo. Add the spices to your liking. Cooked for 4 hours as the flavors bloom the longer you cook it. Keto on my friends.

Made chaffle pizzas for lunch. The measurements for the chaffle are my best estimates and I wrote them down as I went. They were so filling! The flavor was ridiculously fabulous and I only have 3 left...

So I'm at it again. I have a sweet tooth so I decided to do something different. The approximate recipe is in the photos. This made 7 chaffles. One I ate plain and it was ok. Then I made the glaze, holy cow! Game changer... Glaze: 1c Stevia, 1/2 to 1 tsp vanilla and enough water to bring it all together. If you like a thick glaze, add very little water, add more if you want a thinner glaze. I used a whisk to incorporate and drizzle. Keto on my friends!

The first picture with all the spices is what I put in my chaffle. Usually I keep it simple but I had some ingredients that needed to get used up so I figured what the heck. The chaffles had so much flavor, I wanted to eat them alone! The second picture is what I added to 2 pounds of sausage for the gravy. Also added a little oregano, parsley and paprika. The combo of this gravy and these chaffles was to die for. Cook from your soul. Add ingredients that make you happy and if it's not what you want, doctor a little more. You'll be surprised what your cooking instincts will do for you in the kitchen! Keto on my friends!❤

Made buffalo shrimp last night. People always ask for a recipe but all I can give you is the spices I used. Marinated for about 10 minutes then fried in some olive oil. The egg thins were too thin so they didn't work af planned but the parmesan zucchini was delish. After the first serving, hubs put his next serving of shrimp on a bed of salad greens. Topped with blue cheese and I was in heaven!

So, I'm here to share my food journey with Keto. I don't do recipes, but I will help with guidelines. Please do not hesitate to ask questions. Please know that we do what's called Dirty, Lazy Keto. Basically we keep our carbs between 20 and 50. As we get closer to our goal weight we will probably tighten it up, but for now this works for us.
