🍽️ Course Two: Maine Diver Scallops served with Corn-Chorizo Velouté and Marinated Pea Tendrils. Paired with Esprit de Tablas Blanc vintage 2012.

🍽️ Course Three: Duck Leg Confit accompanied by King Oyster Mushroom Risotto and Guajillo-Currant Gastrique. Paired with 2022 Mourvèdre.
