For those of you that love VERY DARK maple syrup we just made some. Come out for Maple Weekend this Saturday and Sunday 10-4 and pick some up. Michael Mosgrove I have some set aside for you.

Come visit us this weekend 10-4. We will have maple products for sale, samples of maple syrup, cream and candy. We also have activities for kids: tap a tree, scavenger hunt, maple worksheets. Come try Sugar-on-Snow or as some call it Jack Wax.

In only a couple more days, all across New York State, producers welcome you to their farms to experience the magic of turning sap into syrup! Who's excited!? Because we sure are!

Mother Nature helped us out yesterday with the snow. We will have Sugar-on-Snow or Jack Wax (as our Grandfather, Rufus "Pat" Campbell) called it for Maple Weekend. What is Sugar-on-Snow? Its syrup heated to around 235-240 and drizzled on snow. It becomes a taffy-like consistency. Its a great winter treat. We remember being kids in the sugarhouse and our grandfather would take the syrup out of the evaporator and spread it on snow for us. So good!

Maple Weekend is only a few days away, and we can already taste the sweetness!

Made maple granulated sugar yesterday. Its all packaged and ready for sale this coming weekend. We get a lot of questions about using granulated sugar. Its great on oatmeal, yogurt, pancakes, and waffles. Add it to coffee or tea. And use it to bake with!! Come see us for Maple Weekend March 16-17 and 23-24 10-4.

The process of turning sap into syrup is a laborious task for the sugarmaker but really quite simple. The sap just gets boiled! As the water in the sap evaporates, the sap thickens, causing its natural sugars to caramelize. Witness this amazing process for yourself during Maple Weekend! It'll be here soon!

Campbell Maple will be open both weekends 10am-4pm. Join us for samples of all things maple, try your hand at tapping a tree the old-fashioned way and learn about how maple syrup is made. We will have maple syrup for sale along with maple cream, candy and granulated sugar. And we have bourbon barrel-aged maple syrup. Come taste it! We look forward to welcoming you.
