Build a Healthy Plate with Nutrition & Wellness Manager Heather Carrera
October is Vegetarian Awareness Month! To celebrate, watch as Nutrition & Wellness Manager Heather Carrera explores the various stations at the Red Jacket Dining Complex and builds a delicious healthy vegetarian/vegan plate. Heather begins her plate-building by visiting Roots—Red Jacket’s dedicated vegan station offering plant-based options daily. There, she decides to try the Sweet Chili Tofu Stir Fry that consists of a variety of vegetables and tofu (a complete vegan protein). Heather also decides to add some olive oil on top of this dish as a source of healthy mono-unsaturated fats which are good for heart health. Next, Heather visits Red Jacket’s soup station for the daily vegan soup offering. With Lentil and Chickpea Soup featured as the day’s vegan soup option, Heather gladly scoops some into a bowl. This soup is filled with plant-based protein in the lentils and chickpeas, and also offers some additional vegetables. Delicious food items such as these can be found at the Red Jacket Dining Complex every day! If you are someone who needs assistance navigating our menus and dining locations to help find foods that accommodate your dietary needs, Heather is the perfect resource for you. Students can schedule an in-person or virtual one-on-one meeting with Heather to discuss dining options throughout the semester (bit.ly/nutrition-and-wellness-2023).

Nutrition & Wellness Manager Heather Carrera, DCN, MS, CNS, CDN is back with our “Build a Healthy Plate” series! Today we are showcasing the Red Jacket Dining Complex and some of the healthy meal options found at the various stations. When building a plate, Heather always begins by looking for options with color. Eating a colorful diet throughout the day/week will provide your body with a diverse nutrient intake for better health benefits and a boost in your mood. Heather visits Clean Eats, a station free of the top 9 allergens, for a roasted chicken and vegetable quinoa bowl that consists of a variety of colors and a whole grain that is high in protein and fiber. Heather also visits the soup station for a bowl of black bean and vegetable soup. For individuals who do not eat meat, beans are a great option to pair with quinoa, as the two together create a whole spectrum of amino acids and a complete protein. Delicious and nutritious meals such as this one are served every day at the Red Jacket Dining Complex. If you are someone who needs assistance navigating our menus and dining locations to help find foods that accommodate your dietary needs, Heather is the perfect resource for you.
