CUL 130 Introduction to Baking Techniques every Fall semester is available on different days 9:00am - 1:50pm at SUNY Adirondack. This class is an introductory course involving the study of the numerous ingredients and their baking function. Students will experience working with breads, cookies, pies, cakes, and pastries. Students will also learn how to convert recipes and express their creativity. This class is a required course for the Advanced Baking Technique class.

CUL 133 Fine Dining Room Service on Thursdays 4:30-8:20pm this Fall Semester is one of the dining room courses offered at SUNY Adirondack. This course is designed to teach the techniques of fine dining restaurant service by actual role playing of the positions in the dining room. Emphasis will be on the front of the house training for students in classic French and American fine dining restaurant service. Students will also learn the management skills necessary to operate a professional elegant dining room. From pre-fixed meals to pairing events, students will experience different dining services to enhance their skills in public food service.

CUL149 Butchering on Mondays 9:00am - 1:50pm is an introductory protein fabrication course. This advanced culinary lab course allows students to learn the proper fabrication of various meats, poultry and fish, as well as the use of butchered trim in value added retail items prepped in various ways. Students also create fabrication yield tests for each fabricated item to find out the product yield and true cost per pound.

CUL 143 Bar Operations and Mixology on Mondays 5-7:50pm is an elective beverage course at SUNY Adirondack every Fall Semester. This course has a beverage service management, cocktail identification, beverage menu and recipe creation training. Students will also learn proper safety beverage serving procedures, dram shop laws and complete Tips certification. This class is open for students in Culinary and Hospitality degree programs.

CUL144 Menu Design and Pairing is a specialized advanced course at SUNY Adirondack. This course is a hands on lab that runs Seasoned our public restaurant during our fall dinner services. Students are trained through various activities in class to design and organize implementation of professional menus. They are trained to identify the use of flavors in food and beverages to prepare proper pairings for a balanced dish.
