I have loved to cook since I was a child, growing up overseas gave me interest in the food experience in other countries.
Now, I also come from a long line of Southern cooks- so I will offer recipes and lightened versions as well.

Merry Christmas!! Yesterday I made my Rotis du Porc ala Boulanger! Fresh green beans, fried apples, mac n chesse for my granddaughters, homemade rolls, plus Chocolate and Lemon pies. What did y'all make for Christmas dinner with family?
Here in North Central Texas, the weather has finally cooled off! Its currently in the 60's and cloudy. A perfect day to make a pot roast in the slow cooker!B Yesterday, I made some pinto beans. What is your favorite thing to cook on cool fall days?
Vichyssoise! I got a yen for this soup, a nice cold soup for summer. Super easy! I am making this tonight for tomorrow's dinner with a salad..
First crop of fresh Roma tomatoes and Basil fresh from my garden. Now, time to make Tomato Basil Soup!
Baked buffalo chicken. A yummy treat I make with chicken thighs here. Just mix Franks red hot with honey (I leave out the butter for calories sake) season the chicken, add to the hotsauce mix and bake at 375 20 - 25 minutes to 40 depending on bone in or out. Done when instant read thermometer is 165 degrees. I

Pure cane sugar, heavy cream, dark or milk chocolate, fresh pecans, pure creamery butter.

Beer batter bread. This one is made with white whole wheat flour and extra sharp cheddar cheese.
Croutons!
So Tomato Basil soup, but no croutons? Easy peasy if you have bread! Cut into cubes. In a skillet, heat olive oul and garlic. Add croutons and toss to cover! Add salt if you like.
TOMATO BASIL SOUP
I collected from my garden fresh tomatos and basil
1 pound fresh peeled tomatoes (to peel easily bring 4 cups water to boil, put in tomatos for about 30 sec and peel slips right off)
1 cup chicken broth, veggie broth or tomato juice)
1/2 cup cream
6-12 basil leaves
Salt and pepper to taste
3 T butter
Cook the tomatoes in the broth for about 30 minutes. You want the broth reduced by at least half and tomatoes are mostly reduced as well. Add basil leaves and using an immersion blender, blend. Add cream, butter and seasonings. Continue cooking on low about 10 minutes, on simmer. Serve with homemade croutons!

I love salads in the summer, don't you? Here's an easy one.
Kristi's Vegetarian Salad
One head Romaine (organic)
Roma tomatoes (I don't eat them lol unless salsa)
Grated cheddar cheese ( I love Cabot cheeses extra sharp white cheese)
Cooked pinto or black beans
Roasted corn
Finely minced onion
Avocado, sliced
Crushed tortilla chips
Sliced jalapenos- fresh or pickled
Dressing
Mexican Crema
Your favorite hot sauce or salsa..I like it hot.
Lime juice/lemon juice
(When I want meat, you can use taco seasoned turkey, beef or veggie burger)
To assemble , layer lettuce in your bowl. Add veggies and toppings. Dress and eat!

A favorite breakfast dish! Chile Relleno torta. The recipe is super easy and in my forthcoming book. Look for it in the next two weeks.!
My Easter Dinner. Pan seared Pork Chop, french style Green beans with garlic and almonds, Creamed corn, and Potatoes Gratin. At least one, the Gratin, is in my new book! I expect it to be ready in the next 2 weeks!! Others will be in my second book!
The Struggle sucks, yet this is our new normal. Since we are all affected by this Covid-19 lets lessen that struggle. Here is an easy dessert recipe from my forthcoming book.
Aunt Katie's Easy Cast Iron Skillet Peach Cobbler
12 inch Iron skillet
Preheat oven to 350
1/2 cup butter
1 cup Flour
1 cup Sugar
1 cup milk
2 16 oz canned sliced peaches. Drain one can.
To the skillet add the butter and mel, add sugar, and whisk in the flour and milk. Once combined, add the sliced peaches and all the juice from one can. Bake for 45 minutes or until the batter has risen around the peaches and is golden brown.

I am working on my recipe book!!
Its a chicken soup kind of day. Using fresh onion, garlic,carrots, celery all minced finely added to chicken broth. Dashes of turmeric and ginger, and since I had a can of chicken meat, a little of that and tiny pasta, Arcini di Pepe. Just a typical throw it together soup.
I also sing. I think this song is apt for the times.
