3 packages of Boursin cheese (any flavor will do)
3 lemons cut in half
1 bulb of garlic (remove the top to expose the cloves for roasting)
1 whole shallot chopped fine
1 cup of white wine
1 package of tri color pasta (any shape will do)
4- 5 boneless skinless chicken thighs
Lemon pepper
Red chili pepper flakes if you want a little spice
Salt
Olive oil
Preheat oven to 375. Add the cheese, lemons, chopped shallots and white wine to a 9x13 baking dish. Place garlic in the dish upside down. Drizzle olive oil and salt over all the ingredients. Bake for 25 - 30 minutes. Cook chicken and pasta while the dish is baking.
For Lemon Chicken: Coat chicken thighs generously with lemon pepper on both sides.
Grill for 6-7 mins on each side. 12-14 mins total cook time. Do not over cook. Let rest for 5 minutes and cut into cubes
Cook pasta according to package directions.
Be sure to generously salt your pasta water. This is key!
Strain pasta and reserve 1 cup of pasta water.
Once everything is cooked, mix together until all chicken and pasta are coated. If the sauce is too thick you can add some pasta water to get to a creamy consistency.
Top with fresh grated parmesan cheese.
