The word Nihari comes from the Arabic word Nahar which means morning, thus the very name Nihari implies it is to be consumed early in the morning. Nihari is rumoured to have taken birth either in the back alleys of the Jamia Masjid in Delhi, or in the kitchens of the Nawabs of Awadh, toward the end of the 18th century at the decline of the Mughal Empire.β
Nihari starts off as a heap of dry spices frying in vegetable oil.β Then, the meat ingredients (mainly beef shank / veal / chicken) are added. The slow-cooking stew is then stirred altogether. Nihari has a flavourful depth so deliberate that one can almost taste the unhurried and intentional consideration gone into putting the ingredients together.β π€€
The extravagant Nihari, with its oozing rich consistency, laden with tender chunks of veal and beef, was initially served as breakfast to the rich Muslim Nawabs of pre-partition India. Recipe essentially the same since its origin, the Nihari is garnished with a side-plate of fragrant sliced ginger, spicy green chilies, and a squeeze from a fresh lime or two. π₯

The tandoor oven is commonly used for cooking and baking many traditional Pakistani dishes. Itβs made from clay, is bell-shaped and typically uses charcoal or wood fire. Temperatures in a tandoor oven can get extremely high (upto 480 degrees Celsius / 900 degrees Fahrenheit) and they remain lit for a long time to maintain the ideal cooking temperature. 'Tandoori' refers to dishes cooked in the tandoor and includes popular South Asian dishes such as Tandoori chicken, Chicken Tikka and breads such as tandoori roti and naan.

Pakistani cuisine is the lesser-known food of the sub-continent and is rich in tradition and culture. The cuisine has developed over many years and incorporates elements from its neighbouring countries. The varied regions also mean there is a wide range of different foods β from the fertile valleys and the sea of Sindh province; to pastoral Balochistan from neighbouring Iran; to the Punjab with its five rivers and the rugged North West Frontier, home of the chapli kebab.
The blend of Indian, Far Eastern and Middle Eastern cooking techniques creates a distinctive mix of complex flavours. The use of pomegranate seeds in some meat dishes adds a sweet, sour note and reflects the Middle Eastern influence on the food.
Pakistani cuisine is generally as having a bread culture, with meals being eaten with the right hand and naan bread or roti used to scoop up curries and accompaniments as is the practice in Muslim culture. Other popular breads include chapati and paratha β fried bread stuffed with dhal or meat and vegetable mixtures.
Pakistan is also the birthplace of the tandoor oven, which is used to cook many of the breads as well as meats like chicken, lamb or fish.
