Roasted Garlic
Preheat over to 400 degrees.
Coat bottom of cast iron with olive oil and set aside.
Cut off tops of whole garlic (approx 1/4 of the way down).
Line cast iron with whole garlic, exposed side up.
Pour 1Tbsp olive oil over each whole garlic.
Add sprigs of Thyme atop.
Optional: Sprinkle with peppercorns.
Cover with foil tightly
Bake at 400 degrees for 1 hour.
Remove foil from cast iron.
Use oil in bottom of cast iron and spoon over each garlic.
Put back in oven and cook an additional 10-20 minutes to your liking.
Sprinkle with Maldon Salt and serve.
Optional: Drizzle with reduced balsamic vinegar.
