Ingredients
-1 pound skinless, boneless chicken breasts
-1 cup all-purpose flour
-2 eggs, beaten
-1 cup bread crumbs
-Salt and pepper for seasoning
-Vegetable oil for frying

Instructions
1) Cut the chicken breasts into bite-sized chunks.
2) In three separate bowls, prepare the flour, beaten eggs, and bread crumbs.

Prepare to tantalize your taste buds with this traditional Italian delight—Stuffed Shells. Gather your ingredients and let's bring a touch of Italy to your kitchen:

Ingredients:
-24 large pasta shells
-15 ounces (425g) ricotta cheese
-2 cups shredded mozzarella cheese, divided
-1 cup grated Parmesan cheese, divided
-1 large egg
-2 tablespoons fresh parsley, chopped
-1 tablespoon fresh basil, chopped
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-2 cups marinara sauce
-1 tablespoon olive oil

Instructions:

1) Preheat your oven to 375°F (190°C). Cook the pasta shells according to the package directions until they are al dente. Drain and toss them gently with olive oil to prevent sticking, and set aside to cool.

2) In a large bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, 1/2 cup of Parmesan cheese, egg, parsley, basil, salt, and pepper. Mix well until all ingredients are evenly incorporated.

3) Take a cooled pasta shell in hand and spoon a generous amount of the cheese mixture into it. Repeat until all shells are filled.

4) Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. This will keep the shells from sticking and add flavor as they bake.

5) Place the stuffed shells open-side up in the prepared dish, fitting them snugly next to each other.

6) Spoon the remaining marinara sauce over the stuffed shells. Sprinkle the remaining mozzarella and Parmesan cheeses over the top for a melty, golden crust.

7) Cover your baking dish with foil and bake in the preheated oven for 25 minutes. Then uncover and continue baking for another 10-15 minutes, or until the cheese is bubbling and slightly browned.

8) Remove from the oven and let sit for 5-10 minutes before serving. This allows the flavors to meld and the cheese to set slightly.

Now enjoy! Garnish with additional chopped parsley or basil if desired. Serve hot and enjoy the heartwarming goodness of homemade Italian stuffed shells!

Welcome to February! With the start of a new month, it’s time to take care of some important tasks around your home.

1) Keep Your Home Safe and Secure: While going through your home checklist, don't forget to also prioritize the safety and security of your house. Test your smoke detectors and carbon monoxide alarms to ensure they are in working condition. Check your doors, windows, and locks for any signs of wear or damage and make necessary repairs. It's also a good idea to review your home insurance policy and update it if needed.

2) Check for Damage: Winter can take a toll on your home, so it’s important to check for any damage that may have occurred. Look for cracks in the walls or foundation, leaks in the roof, and any other signs of wear and tear. Addressing these issues now can save you from more extensive repairs in the future.

3) Get Ready for Spring: With winter almost over, it’s time to start thinking about spring! Start by planning out your garden and ordering any necessary seeds or supplies. You can also begin cleaning up your outdoor space by raking leaves, pruning trees and bushes, and preparing your patio furniture for use.

4) Deep Clean: After the holiday season, your home may be in need of a deep clean. Take some time this month to tackle those overlooked areas like baseboards, ceiling fans, and kitchen cabinets. Don’t forget to also give your carpets, furniture, and curtains a good cleaning.

5) Stay Energy Efficient: Consider adding insulation to your windows and doors or using draft stoppers to prevent cold air from seeping in. You can also lower your heating bill by setting your thermostat a few degrees lower and using warm blankets and layers instead. (I recommend a heated blanket!)

While it can be easily made with store-bought boxed mixes, there's nothing quite like the taste of homemade mac and cheese!

Ingredients:

-1 pound (16 ounces) elbow macaroni
-4 tablespoons butter
-1/4 cup all-purpose flour
-2 cups milk
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-2 cups shredded cheddar cheese

Instructions:
1) In a large pot, cook the macaroni according to package instructions until al dente.
2) In a separate saucepan, melt the butter over medium heat.
3) Whisk in the flour and cook for about 1 minute, until mixture is smooth and bubbly.
4) Gradually add in the milk, stirring constantly until mixture is smooth and slightly thickened.
5) Add in the salt and black pepper, stirring to combine.
6) Gradually stir in 1 cup of shredded cheddar cheese until fully melted and incorporated into the sauce.
7) Drain the cooked macaroni and return it to the pot.
8) Pour the cheese sauce over the macaroni and stir until evenly coated.
9) Transfer the macaroni and cheese into a greased 9x13 inch baking dish.
10) Sprinkle the remaining cup of shredded cheddar cheese on top.
11) Bake at 350 degrees Fahrenheit for 20-25 minutes, or until the cheese is melted and bubbly.
Let cool for a few minutes before serving and enjoying your homemade macaroni and cheese!

Additional Tips:
- For added flavor, you can mix in other types of shredded cheese such as Gruyere or Parmesan.
- Experiment with different types of pasta shapes to change up the texture and appearance of your mac and cheese.
- To make this dish more nutritious, try adding in some cooked vegetables like broccoli or peas to the macaroni and cheese before baking.
- For a crispy topping, mix together breadcrumbs with melted butter and sprinkle on top of the mac and cheese before baking.
