We’ve adjusted our hours for Saturday 6/8, we’ll be closin up shop at noon instead of our usual 4pm! Hey all! We’re excited to have a fresh supply of Pistachio for you this weekend. I know some of you get bummed out when we’re out of stock, so I wanted to offer some explanation. Most ‘pistachio flavored’ things are made with almond extract and dyed green. Our pistachio latte tastes the way it does because it’s full of actual pistachios at peak freshness that we source from a farm in California. We’ve been working with the farm for several years, and the climate in California can sometimes affect supply. Each week, they send us a 4 gallon pail of minimally processed pistachio butter. Each 4 gallon pail costs about $600, which makes buying in bulk a challenge. My pals Jeneca and Gidget receive the pail and turn it into our pistachio orgeat through a process of blending the butter with a little filtered water to loosen it, then straining it by hand through a 100 micron superbag. The resulting extra-silky pistachio paste is lightly sweetened and poured into the squeeze bottles you see at our cafes. When combined with a fresh espresso made from coffees roasted by our pals Steve and Emery on our Probat at our warehouse, and day-fresh grass-fed jersey milk from our pals Tom and Sally, magic happens!
I created the pistachio latte at coat check a few years ago as a one-off out of frustration about ‘pistachio flavored’ things that don’t really taste like pistachio, and it has since become our most popular offering! Which is a fun - tho very labor intensive thing.
Cheers to another season of iced pistachio on the patio! Also - if you’d like to try it as a milkshake we’re making them at Landlocked now! I’ve been around there a lot lately and would love to make you one and see what you think.

Hi y'all! We're going to adjust our closing time to 4 starting this week. We get a lot of interest in renting our space for events in the evenings, and we've been working with our pals at Tinker House Events to make it available on its own, as well as in conjunction with their beautiful space on the second floor. In addition to private events, we're looking forward to doing specific programming like shows on the patio this summer and First Friday openings. If you have ideas for events, or work with organizations, bands, artists etc looking for nice spaces for open-to-the-public things, drop us a DM!
