Local female veteran takes owning a catering business from dreams to reality

Clarrisa's Kitchen and Catering Service is catering from a new location, which the owner, Clarrisa Munford, describes as "a dream come true." The woman, veteran-owned kitchen has stepped it up a notch and is now hosting events with the opening of JC Legacy Event Center located at 7713 St. Andrews Rd., while also continuing with catering.

Munford was a medical technologist in the Army for a decade and, after retiring, continued in the medical field afterward for 15 years. She said that through it all, she kept feeling a pull toward opening a catering business.

"I realized I was enjoying catering a lot more than I was being at the hospital, and I think it was just time for a change," said Munford. "If you do anything for 25 years, you probably want to do something different after a while."

Munford, her husband, and two daughters all have names starting with 'J' or 'C,' hence the name JC Legacy and she shared that there is also another important meaning behind the name.

"Me and James like to say that JC also stands for Jesus Christ because it's hard working as a married couple, working together, living together, so we just try to put God first in everything we do, and it's been really good," she said.

Munford first saw the building that is now JC Legacy Event Center in 2018 and dreamt of opening her business there. After a few years, she was able to purchase the space in July 2022. The family initially purchased their new Irmo location for the kitchen but decided to expand their offerings. Groups can now rent the event space and have the option of catering through Clarrisa's Kitchen and Catering Service.

"We specifically bought it for the kitchen, but it was so much extra space, and we really needed to do something with this space, hence the idea of 'event center' because a lot of times when people call us for catering, they will ask me do I know of a space. So now I can say, 'yes, I know of a space,'" said Munford.

According to Munford, many improvements have been made to the building, which has been vacant since 2013. "It definitely was somewhat of an eye-sore, but I could see my diamond in the rough, so I was excited about it," she said.

Munford said a piece of advice she would give to someone like herself who is trying to start a business is to keep going and never give up.

"I've been on this journey for a little while, and even from the time I saw this building, it was four years later before I got the building, but I was still catering and renting spaces, whatever the case may be," said Munford. "Keep in mind it's not going to be an overnight success; that's not realistic."

A personal favorite meal of Munford's is Caribbean cuisine, including jerk chicken, curry chicken, rice, peas, cabbage and carrots. Other signature dishes from Clarrisa's Kitchen and Catering Service include baked chicken with bread crumbs, chicken marsala, soul food and Korean food.
