We have jalapeno cheddar wagyu meatballs, buffalo chicken dip, smoked chuck roast beef stew, lil smokies in a blanket, spicy honey bbq wings, and a Hillbilly Asian fusion smoked orange ginger pulled pork. Tis the season for a delicious debate. To brine or not to brine that is absolutely the question! This lovely 20.56 pound turkey was dry brined 14 hours then stuffed with a wonderful bouquet of citrus aromatics and 1 single cinnamon stick (trust me). Wood of choice smoking our fine non feathered friend was cherry and hickory...... I have been leaning in a very positive direction to the flavor components provided by Hickory. A huge debate with poultry of any design is how to get that delectable crispy bite thru skin! Here is how I accomplished that. I smoked this turkey at 315 degrees for 4 hours and 15 minutes. Basting completely with an herb butter mixture and rotating the bird every hour. The gobbler was cooked to perfection juicy and succulent and simple enough for anyone to do! MAN!!!! Willow Seasonings & Blends, LLC was the damn star tonight!!!! Reverse seared porterhouse steaks seasoned with the prototype steak seasoning, lobster tails rubbed in Sweet Smoke then basted with a blend of garlic, thyme, european butter, and Sweet Heat snow crab legs steamed and served with the same bitter as basted lobster in. All done on the Masterbuilt 1050 Gravity Fed Digital Smoker and reverse sear on the blackstone 36 inch griddle. All second in comparison to an entire day of just me and my son!
