Ingredients:
1 box brownie mix (plus ingredients listed on the box)
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons milk
1 cup mini chocolate chips
8 oz chocolate candy coating
Directions:
Preheat oven and prepare brownie mix according to package instructions. Let brownies cool completely.
In a mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla extract.
Gradually mix in flour until combined. Add milk and mix until dough forms. Stir in mini chocolate chips.
Roll cookie dough into small balls and place on a baking sheet lined with parchment paper. Freeze for 30 minutes.
Once brownies are cooled, cut into small squares. Flatten each square and wrap around a cookie dough ball, sealing edges to form a bomb.
Melt chocolate candy coating according to package instructions. Dip each brownie bomb into the melted chocolate, covering completely.
Place dipped bombs on parchment paper and let set until chocolate hardens.

1/4 cup granulated sugar

1 cup granulated sugar
1 tbsp ground cinnamon
For the Caramel Sauce (optional):
1 cup caramel sauce
Instructions:
Prepare the Dough:
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Prepare the Cheesecake Filling:
In a small bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
Transfer the filling to a piping bag.
Shape the Cookies:
Preheat the oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
Roll the dough into 1-inch balls and flatten each into the shape of a circle. Or use a large cookie cutter to shape the cookie.
Pipe a small amount of cheesecake filling around the sides the of each cookie then fold the edges over to enclose the filling.
Press down to seal the dough. Use a small cookie cutter to cut the center out so the cookie will be in the shape of a donut.
Coat the Cookies:
In a shallow dish, combine the granulated sugar and ground cinnamon.
Roll each cookie in the cinnamon sugar mixture to coat evenly.
Bake the Cookies:
Arrange the cookies on the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the cookies are lightly golden and set.
Pineapple Quick Bread
BREAD:
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 oz. cream cheese, softened
1 cup sugar
3 teaspoons vanilla extract
1 large egg beaten
1/2 cup sour cream
1 20 oz can crushed pineapple, drained (save 2-3 Tbsp of the juice for the glaze)
GLAZE:
1 1/2 cups powdered sugar
2-3 tbsp reserved pineapple juice
PREPARATION
Preheat oven to 350ยฐ and grease a bread pan.
In a medium bowl, combine flour, baking soda, and salt together. In a separate bowl, beat egg, sugar, cream cheese, and vanilla until smooth.
Add flour mixture into cream cheese mixture and stir. Add the sour cream and mix until just combined, then fold in crushed pineapple.
Pour into prepared pan and bake for 55-60 minutes or until a toothpick inserted in the middle comes out clean. Cool in pan for about 15-20 minutes and then let it cool the rest of the way on a wire rack.
For the glaze, mix powdered sugar and pineapple juice together and drizzle over the cooled bread.

1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Fresh basil leaves, for garnish (optional)
Directions:
Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
Clean mushrooms with a damp paper towel, remove stems and scrape out gills.
Place mushrooms on a baking sheet, drizzle with olive oil, season with salt and pepper. Bake for 10-12 minutes.
Heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic, and cook for 1 minute.
Add chopped spinach, and cook until wilted (2-3 minutes). Remove from heat.
In a bowl, mix ricotta, mozzarella, Parmesan, Italian seasoning, and spinach mixture.
Remove mushrooms from the oven, and drain excess liquid.
Fill mushroom caps with cheese-spinach mixture.
Return to oven, and bake for 12-15 minutes until cheese is melted and bubbly.
Garnish with fresh basil leaves, if desired.

Ingredients:
1 cup lemon juice (freshly squeezed)
ยฝ cup sugar
1 ยฝ cups water
4 cups vanilla ice cream
Directions:
Prepare the Lemon Mixture: In a blender, combine the freshly squeezed lemon juice, sugar, and water. Blend until the sugar is completely dissolved.
Add the Ice Cream: Add the vanilla ice cream to the blender with the lemon mixture.
Blend Until Smooth: Blend all ingredients together until smooth and creamy. Ensure there are no ice cream lumps remaining.

Ingredients:
8 slices sandwich bread
1/4 cup unsalted butter, softened
2 cups shredded brisket, cooked
2 cups shredded cheese (such as cheddar, mozzarella, or provolone)
1/4 cup barbecue sauce (optional)
2 tablespoons mayonnaise (optional)
Directions:
Preheat a skillet or griddle over medium heat.
Spread one side of each slice of bread with butter.
Place half of the bread slices, buttered side down, on the skillet or griddle.
Top each bread slice with shredded brisket and shredded cheese.
If desired, drizzle barbecue sauce over the brisket and cheese.
Place the remaining bread slices on top, buttered side up, to form sandwiches.
