Broccoli cheddar soup hand pies are cheesy, comforting pastries perfect for a weeknight dinner or light lunch when fall rolls around and temperatures begin to drop. Check out 's recipe below!​

Filling​
2 Tbsp olive oil​
1 medium white onion, minced​
2 garlic cloves, minced​
2 cups broccoli florets, chopped​
1 tsp fresh thyme​
1 tsp salt​
1 tsp black pepper​
1 (8 oz) pkg cream cheese, softened​
1 Tbsp Cheddar Cheese Powder​
1 Tbsp Garlic ‘n Herb Seasoning​
1 ¾ cup cheddar cheese, grated​
½ cup provolone cheese, grated​

Pastry​
2 frozen puff pastry sheets, thawed​
2 Tbsp flour​
1 egg, beaten​
1 tsp water​
1 Tbsp Everything Bagel Spice Blend​
1 Tbsp flaky salt​

Method​
Preheat oven to 400°F. Line two baking sheets with parchment paper; set aside.​
​
In a large pan, sauté onion in olive oil over medium heat until translucent (approximately 5 minutes). Add garlic, broccoli, thyme, salt, and pepper, and cook until broccoli is tender.​
​
In a large mixing bowl, add softened cream cheese, 1 ½ cups cheddar, provolone, Garlic ‘n Herb Seasoning, and Cheddar Cheese Powder. Beat with a hand mixer until well combined. Fold in broccoli mixture.​
​
Lay out puff pastry on floured surface and cut into quarters with a sharp knife. Whisk egg with water; set aside. Place3-4 tablespoons of broccoli and cheese mixture in middle of each square. Brush the border of each pastry with egg wash and fold 2 opposite corners over the center of the filling. Brush with remaining egg and sprinkle with ¼ cup cheddar and Everything Bagel Spice Blend (optional). Move pastries to baking sheets and bake for 18-22 minutes, rotating pan halfway through. Top with flaky salt and serve warm.​
