As most root foods, it's is loaded with vitamins and has an unusually high mineral content, making it an excellent food choice for those who struggle with any type of muscular or skeletal issues. I came home yesterday and didn't know what I wanted, this was the end result 🤣🤣
Curried Eggplant/Melongene
2 medium eggplant chopped
1 large tomato chopped
I small white onion finely chopped
1 tbls fresh green seasoning finely chopped (I used big leaf thyme, chives, celery leaves)
2 flavoring peppers chopped (optional)
1 tbls ginger garlic paste
1/2 tbls chief curry powder (or your personal favorite)
1 tbls vegetable oil
1/4 tsp turmeric powder
1/8 tsp 5 spice powder
1/2 tbls crushed red pepper
Himalayan pink salt to taste
Heat your cast iron skillet and add oil. When the the oil is hot but not yet smoking add your curry powder and stir with a wooden spoon until the curry turns from yellow to brown. Quickly add your ginger garlic paste and keep stirring, lower your flame to slow the process. Add onions and stir fry until they are clear. Add flavoring peppers and crushed red pepper to skillet and combine with onions. Next add your eggplant and stir to coat them in the seasonings, add 1 to 2 tbls of hot water around the edges and cover the pot for 6 to 7 minutes. Open pot and add tomatoes, green seasoning, salt, turmeric powder and 5 spice powder stir to combine. Add a 2 more tbls of hot water and cover for another 3 to 4 minutes to simmer. Turn off the heat and serve hot.
