We were recently asked by a guest; “Why doesn’t Mattinas offer Spaghetti on their Menu?”

Well, we DO!!! Sort of… It’s called Bolognese.

“Why don’t you call it Spaghetti? What’s the difference?” The short answer is, THE SAUCE!

Bolognese Sauce is a Traditional Italian style Ragu Sauce originated in the region of Bologna Italy. The ingredients, preparation and cooking process of a GREAT Bolognese sauce are VERY different from a Basic Ragu Sauce.

In Italy, “Spaghetti” simply refers to the pasta of choice a Bolognese Sauce is served with, NOT the entire dish as we know it in America.

Rather than a “soup-like” Spaghetti Ragu, Bolognese is a THICK and rich-in-flavor meat sauce served on top of Pasta. (Not mixed in with the pasta). In fact, in Italy, the pasta is often served by itself with a bowl of Bolognese on the side. The diner can then mix the two together according to their own preference.
