Tried something new yesterday, Lavender Espresso Gluten-free Vegan cake with Vanilla Bean Vegan Buttercream icing. I used lavender I harvested from my garden. For a first try, I think it turned out well. Going to try other variations too.

Tried this idea out the other day. Banana Nut Rum Biscuit. Soaked pecans in Goslings Black Strap Rum for a few days. Used the soaked pecans in the biscuit and the icing.

When the college students come for dinner, I go full out. Beyond Meat Brats, Mashed Potatoes, Mushroom Gravy, Green Bean Casserole, with a Thyme Cheddar Biscuit. They were happy with their meal. ❤️😊😋

Tomorrow is my shoulder surgery, finally. I won’t be baking for the next two weeks. 😭😭

Created this pie for dinner last night. My husband said, “ It’s a home run!”
I added some Thyme to the crust dough. Sautéed some Baby Portobellos with some Yellow and Red Peppers, plus a little Red Onion. Then finished them off with some Balsamic Vinegar. I also caramelized some Vidallia Onion, roasted some tomatoes, plus some Cherry Tomatoes. When I assembled, I slathered Dijon Mustard on the pre-baked crust, layered caramelized onion, roasted tomato slices, mushroom mixture, topped with shredded Cabot Seriously Sharp Cheddar, a layer of roasted Cherry Tomatoes, diced Jalapeños, another layer of cheese, and topped with leftover tomato slices. Baked in a 375 degree oven for about 40 minutes. I let the pie sit for about 15-20 minutes before serving.

This summer I will have shoulder surgery, which means I won’t be doing a lot of baking during the summer - July will probably when I can start again. Also, the costs of many of my supplies have doubled in cost. If you need something in July contact me and I’ll let you know. We are so thankful for all our customers!
