Introducing our new and improved Poptarts. The last few months weโve been tinkering with several different flavors and doughs to bring a new generation of slow fermented Poptarts here at Hudsonโs.
We wanted to give our kiddos an experience from our childhoods without all the added ingredients of store-bought. And while our initial Poptarts were delicious, weโve heard from all of you that these new ones are even better. Full of nostalgia and scratch made organic fillings!
Many of you have already tried them! And weโve been getting rave reviews! A true slow fermented sourdough dough and lots of love! ๐
We will have them in our case every day and will be rotating certain flavors out seasonally going forward.
It takes a community.
Each of these products helps support a small business in our larger Idaho food community. Behind every label is a story about countless hours and incredible effort to make that item the best it could be.
Our food system is growing and we believe a rising tide raises all ships. It is our belief that supporting local is one of the best ways to be involved in a regenerative solution to feeding the Treasure Valley.

This picture is right after we pulled an all nighter. One of the many sleepless nights we endured until we could really key in our process and create sleep windows. ๐ We started Hudson Baking Co as a bread delivery service. We would drive into Boise every night, and work around the clock to time all of our fermentation windows, adjust ovens, package, and deliver fresh slow fermented breads, cinnamon rolls, buns, and bagels.
Aaron was still working full time during the day, and the two of us would process doughs all night long. Ashton would come to the commissary kitchen at 4:00am and we would start packaging and load up the product to deliver. The two of us would go from South East Boise to Nyssa, Oregon delivering sourdough goods. We believed in quality, we believed in supporting farmers who are passionate about sustainable agriculture, and we believed in creating better bread products. Breads made with slow fermentation, making it easier for our bodies to digest, more nutritious, that we could feel good about sharing with our families.
This has been our mission from day one. To make better bread so that our customers who have become like family can eat better bread ๐ฉท We are passionate about ingredients, local food, and encouraging people to vote with their dollar. Our process is extensive and the days are long. The days havenโt gotten any shorter, but our bread family has grown beyond anything we couldโve ever imagined. We are so proud of this little bread shop that feeds so many. Thank you for being a part of our story and supporting our little bread shop. It means the world to us that we get to inspire people to eat local, to eat better bread, and to be a part of the local food movement. Slow food is the best food. The one made by your local baker, with ingredients you can pronounce, and a process that truly is a labor of love.

If youโve been following us for a while, you know just how much we care about food policy and supporting local farmers. Well, something big just happened that's worth celebrating together. ๐โโโโโโโโโโโโโโโโโโThe USDA made a ruling that's a huge win for ranchers and for all of us as consumers. They've decided that only meat from cattle raised and processed right here in the US can have the "Product of the USA" label. ๐บ๐ฒ
So, when you see that label, you can trust that the meat truly comes from US cattle. ๐ Before this ruling, meatpackers could label foreign beef as if it were produced by US farmers, which was misleading. This is similar to wheat. Wheat doesnโt always disclose where itโs from because itโs packaged here.
Why is this so important to us? Well, we're passionate about the quality of the ingredients we use to make your favorite slow-fermented, sourdough breads and we work hard to connect you with local food and farmers. This ruling helps us see where our food comes from, which matches how we do things โ bringing farm-to-table goodness right to your plate! ๐ฝ๏ธ
