Garlic butter ribeye steak bites over a bed of risotto...seriously addicting stuff right here. Gave the steak bites a quick sear over some charcoal on the kettle then butter basted in the cast iron until done.

Tossed a brisket on the smoker after yesterday's turkey came off to take up to my parents for a late Thanksgiving meal. Rested in the warmer overnight and rode in the the whole way up - perfect slicing temp when we arrived. Looking for a little more touch up on the trim but that is why we are here to always continue to improve.

Thanksgiving turkey breast. Seasoned with 16 mesh black pepper and Blended Honey rub. Basted with a garlic herb butter throughout the cook. Hope everyone had a great Thanksgiving with their families 🥃

"Patio Smash" two 1/3lb patties smashed on the flat top, American singles (individually packaged of course), caramelized onions, pickles, ketchup and mustard.
Smoked turkey and cheese melt with a mixed berry habanero sauce I made with fresh fruit and Texas Pepper Jelly] black cherry habanero rib candy. We served this today for our Sunday special but it is definitely not the last time I'll be making these.

Had a great first weekend serving food to everyone out at for the pumpkin patch! We appreciated all the friendly faces and great remarks regarding our food!
Special thanks to my wife for all the help and for making our first happen with some killer pumpkin pancakes to go with the maple pork belly burnt ends! It was a great dish!
We will be back next weekend with the same menu with the addition of...burgers! Come hungry!!!

This is my final entry to close out the last bit of summer fun my ambassadors and I have been having with this contest. We were tasked with creating a dish featuring the final month's secret ingredient - Cherry Habanero Pepper Jelly!

smoked cinnamon bourbon apple crumble. My wife did awesome on this one.
Steak tacos topped with some homemade guac. Pickled onions and for me - chopped fresh onions for my wife. getting us through the cook.
Thank you to everyone that came to try our dish yesterday at the BBQ and Bourbon event. We prepared a Pad Thai pork spare rib with a crunchy sesame slaw.
Also a big thank you to and for including us in the event - everything was absolutely fantastic!
Texas spares over some doesn't get much better than that.
Fired up the wok and made Pad Thai for supper tonight.
I used recipe from his recent book 'The Wok'. The only substitute was the protein, I put the leftovers to work and used grilled pork chops.
Rivals most spots I've had, very happy with how this turned out.
