These cattle have a lower moisture content due to certain practices the farmers use to maximize fat content
while imparting a more concentrated amino presence on the palette. This also helps with the searing of the finished product by creating a more caramelized Maillard reaction due to the lack of moisture. The end result = 🫠🔥
