Well what do ya know? One of my class assignments this week involved making SCONES!
These are BOMB! I'm ditching the old, in with the new! And now, I can tell you that I am technically trained in making scones, as a pastry chef in training. How cool is that?

We recently had the privilege of serving 25 of the women, whose families serve Las Vegas through the Send Network, a beautiful Galentine's Tea Party

The menu included a first course of crustless spinach & muenster cheese quiche, crustless bacon & sweet potato quiche, maple sausage links, sliced cucumbers, paprika dusted hummus with sweet & savory tuiles, and sea salt and black pepper kettle chips.
A second and third course, served together, of blueberry scones with lemon curd and clotted cream, yogurt parfaits with fresh fruit, granola and honey, strawberry meringues cookies and diamond cookies, with a finishing bite of mint chocolate covered pretzels.
A beverage bar with 4 different selections of freshly packed loose leaf tea, coffee and ice water infused with Taiwanese Butterfly pea flower.

As always, my absolute favorite part of any party is listening to the laughs and good times being had around the tables we set. It's the greatest compliment.

Happy Valentine's Day from us to YOU!

Have you ever had a Baked Alaska? This week we worked on making different kinds of meringues to create different desserts. This was my first time to ever taste Baked Alaska and I was lucky enough to have the most delicious homeade ice cream to build it with! The charred swiss meringue was probably one of the most dreamy things Ive ever tasted!

This week in class, in order to learn new methods and techniques, we made brownies, triple chocolate chip cookies and almond biscotti.
These were definitely not your quick, go-to recipes for after dinner desserts. Each one took SO long. The biscotti was my favorite to make!

Last week, in class, we focused on proper creaming methods.

Edit to add* this week was about different ingredients and their reactions and Ive made a second batch of pancakes and WOW look at these big boys!!! Ingredients matter!!! Check out the big boy pancakes in the comment section 👀:

Buttermilk pancakes, crepes, pineapple jam, blackberry and strawberry jam and chantilly cream! Week 2 of school is done! Everything was devoured and approved by the fam - nom! Nom!

As most of you know, I am currently in culinary school, in the baking and pastry arts program. As promised, I will be sharing part of my journey here on this page! This week, I will be making pancakes, crepes, jam and chantilly cream.

The menu from our Hawaiian tea was so much fun!
1st course - individual charcuterie boards, with pacific island influences such as dried fruits, nuts and crackers made in Honolulu and a cocount bowl full of fried spam with rice
1st course, part 2 (is that a thing?!?!) - grilled Elvis sandwiches! Grilled bananas, bacon, peanut butter - ❤
2nd course - Hummingbird scones, clotted cream with pineapple and mango jam
3rd course - alohamacs, fruit cups, Hawaiian mochi birthday cake, poached pears and ice cream

A day to wear stretchy pants, for sure!

We loved our guests and our hostess and the beautiful home we were invited into! Thank you for the experience. It was our honor to serve you!

Hawaiian Outdoor Tea Party for 5 - it couldn't have been a more beautiful day here in the Las Vegas Valley for it!
With the ambience of the Hawaiian music in the background, the gentle breeze and lots of laughter - I'd call it a perfect day.

Happy Birthday to the King, Elvis!
Today, we had the privilege of serving a Hawaiian themed tea party for a lovely lady who shares her birthday with Elvis! We threw some Blue Hawaii on the playlist and gave this nod to him, on the menu. Grilled Elvis sandwiches, just like his momma made them.
