On this first edition of “Cooking with Chef Ronnie”, Chef Ronnie Rainwater, Director of Culinary for Emeril’s Restaurants in Las Vegas, shows us how to make our crave worthy Loaded Potato Croquettes. Using simple ingredients and a little extra effort — you can enjoy this kicked up side dish at home! Ingredients:
2 lbs russet potatoes
1 tbsp potato starch
2 tbsp chives - finely chopped
2 cup white cheddar cheese - grated
4 tbsp sour cream
4 strips bacon - cooked and chopped
salt & pepper - to taste
1 qt vegetable oil - for frying
Instructions:
Bake potatoes at 400 degrees until halfway done. Let cool overnight. Remove skin and shred on a cheese grater. Add potato starch, 1/2 if the chives, 1/2 of the cheddar cheese and salt & pepper to taste. Mix together well. Using a small scoop, scoop out potato mix into compact balls. Deep fry until golden brown. Season with a little salt as you remove from oil. Arrange in a shallow ovenproof dish, top with remaining cheddar cheese and melt under your oven broiler. Once cheese is melted garnish with bacon, dollops of sour cream, and remaining chives. Serve and enjoy!
