FUN FACT // In the late 1800s, due to the lack of refrigeration and the scarcity of milk, Florida Keys local residents combined Key limes, sweetened condensed milk, and eggs to create this iconic dessert. The chemical reaction between the lime juice and condensed milk naturally thickens the filling without the need for baking, a technique that’s still used in traditional recipes.
