Yesterday was tomato day at our house! I don't grow my own tomatoes, so i don't really save money, but these taste so good! Last year I could not get canning lids, so i tried freezing and it worked well. Did half plain and half sauce....the house smelled so good yesterday!

Lots of our favorite "comfort foods" are low in fiber. Don't forget to include some of these fiber "stars" in your meals and snacks! Fresh/dried fruit and berries, raw veggies, nuts, whole grain cereals, beans/legumes, whole grain breads and crackers.
Keep the plant foods coming during quarantine. Here's an all green salad to bring spring thoughts! Lettuce, avocado, green apples, pistachio nuts, parsley, and lime (spritz by itself or mix with some olive oil and maple syrup for a vinaigrette).

One more post about "quarantine kitchens." Our stores were out of bread so I have been relearning baking bread from scratch. So far we've enjoyed rye bread and oatmeal bread (loaves pictured before baking.) But now the store has been low on flour and yeast, so am waiting to restock the basics. Some of the foods from the immune support list that we have been using: citrus for snacks and desserts, leafy green salads, baked canned yams (like Thanksgiving!), veggie and legume soups (with canned veggies and canned or dry legumes), yogurt, tuna, eggs, and lean meats.
Try to keep the good foods coming. To support your immune system (not a "boost" or "magic bullet") eat these foods:
Citrus fruits – good source of Vitamin C
Winter squash, spinach, Swiss chard, kale, sweet potatoes – deep orange and dark green leafy fruits and vegetables are great sources of Vitamin A
Chicken, turkey, tuna, salmon, lean cuts of beef and pork – good sources of protein, iron and B vitamins
Whole grains, legumes and fermented foods (like yogurt) – promote healthy gut bacteria
Seeing more and more posts about nutrition supplements you can buy to "boost" your immunity.There is a lot of research about nutrition and immunity, but unless you have a specific vitamin deficiency a supplement is not likely to "boost" your immunity. Tip #1 for maintaining good immune function is to eat enough calories to support both your body's usual cell building AND your physical activities.
