3 Step System for Batch Cooking by Louise Hendon -

1. COOK A BATCH OF MEAT IN THE SLOW COOKER
This is the key step you shouldn't miss.
Think about how long it takes to cook raw meat (unless it’s seafood)...
It takes ages!
Now think about how quickly you can reheat cooked meat...
Even if you don’t like using the microwave, you can still reheat meat in under 10 minutes in a pan!
Here's how to batch cook your meat:
a. Buy a large amount of meat (choose fattier cuts).
In the US, US Wellness Meats and ButcherBox are excellent for delivering quality meats to you.
I like to budget for around 1/3-1/2 lb of meat per adult per meal.
It can be any meat (my favorites are beef rounds, pork butts or shoulders, chicken breasts or drumsticks (with the skin on!), and beef boneless short ribs).
b. Place the meat in a slow cooker and add salt.
If you’re not that hectic, feel free to add other seasoning.
There's no need to add any liquids to the meat for the most basic dishes.
c. Cook the meat overnight or during the day while you’re away.
I usually put it on low heat for 8-10 hours.
Buy a slow cooker (like this one) that has an automatic timer in case you can’t get home in time.
d. When the meat is ready, put it into containers and store in the fridge or freezer
I have a ton of glass pyrex containers that I use for this purpose.
Feel free to eat some of the meat for dinner while it’s warm too.

2. STOCK UP ON FROZEN VEGETABLES
Frozen vegetables sometimes get bad rap for not being as healthy as fresh veggies.
But:
The fruit and veg you find in large supermarkets has usually been sitting on the shelf for weeks, meaning they've lost nutrients.
While frozen vegetables keep more of their nutrients, as they're frozen a couple of hours after harvest.
Ideas for frozen veggies to keep in your freezer:
Kale
Swiss chard
Spinach
Green beans
Broccoli
Of course, if you do have time to buy fresh vegetables and to use them before they go bad in your fridge, then please buy them – I am not against fresh produce in any way!
Extra Tip: O ther healthy foods to keep in your freezer are bone broth, seafood and calf liver.

3. PUTTING IT ALL TOGETHER
Imagine if you cooked 2 types of meat and had some frozen fish and fruits/vegetables in the freezer...
When it's mealtime, you'll find you have a lot of easy choices:
(1) Just reheat the meat with some healthy fats and eat it with some vegetables (add some olive oil and vinegar on top).
(2) Saute the meat. Add some coconut oil into a pan, shred the meat, and saute the shredded meat with your vegetable or fruit of choice . You can even add some spices or tamari sauce for extra flavor!
(3) Make a Stew. Heat some water (or ready-made meat broth, if you have any) in a pot, add in the shredded meat, add in some vegetables of your choice, add salt/spices to taste. And you have a delicious stew!
(4) Make a Salad. Shred the meat without reheating it, buy some salad greens or a prepared salad from the store and add the shredded meat with some olive oil and lemon juice. Toss and eat.
Extra tip: Stock up on healthy snacks, so you'll have something to eat if you get hungry on the go. A few good choices: 100% chocolate, beef or turkey jerky, salami, coconut butter. More snack ideas here: https://ketosummit.com/the-best-keto-snacks

1. FEAR OF MISSING OUT

Fear of missing out, aka FOMO could be sabotaging your diet.

How do you get around this? Try these strategies:

Eat out, but ask for modified versions of dishes on the menu
Put a healthy spin on favorite dishes (there are tons of recipes out there from folks who have done the same)
Find healthy indulgences to meet your cravings
Remember: eating healthy doesn't have to mean feeling deprived.

2. FEELING OVERWHELMED

There are a few different ways overwhelm could be stopping you from eating healthy food.

There's too much information, which diet do you choose?

Take a look at our email comparing keto, paleo and AIP.
Then choose one diet to follow for a month - you can switch after that month if it 's not a good fit
There are so many changes to make, how do you start?

Make small changes to start with, e.g. adding one healthy food to your diet or eliminating one unhealthy one. Or start by changing just one meal per day.
Build on your small changes step-by-step and you'll gain momentum as you go
Or pick a meal plan to follow so you have the support you need
There are overwhelming negative beliefs holding you back

Thoughts like "This is just too hard" or "I could never eat healthy"
Focus on changing your mindset, there are great resources you can find on this with a quick Google search
Could overwhelm be the reason you aren 't eating healthy?

3. PERSONAL REASONS & YOUR HIDDEN NEEDS

Everyone has reasons for eating the way they do -

If you try to change your diet without addressing the needs behind your eating habits, you're bound for failure.

The good news? You can meet your needs in healthy ways, too.

Have a look at these common scenarios:

Maybe you dislike cooking and don't know your way around a kitchen...
Unhealthy solution: Living off junk food and take-out
Healthy solution: Start off with batch-prepping a few very simple basics once per week (just one day of cooking and then it's over!) You'll be able to easily throw together meals all week long - all you have to do is heat them up.

Maybe you rely on food to de-stress after a long day...
Unhealthy solution: Ice cream. Chocolate. Cookies.
Healthy solution: Exploring stress relief methods like meditation and exercise - or simply going to bed early if you're exhausted after a long day.

Maybe you eat to distract yourself when you're bored or unhappy...
Unhealthy solution: A jumbo-sized bag of chips and candy from the vending machine.
Healthy solution: Taking a walk, playing with a pet, putting on your favorite music. Or talking to a friend if you're feeling down.

2) Answer these questions as you read:

3) Then brainstorm some solutions and strategies.
4) Commit to making gradual change by implementing one of your new strategies each week

Attention Hashimoto's patients!!

Did you know specific dietary changes can reduce your thyroid antibodies? Izabella Wentz discusses a study about the effects of nutrition on Hashimoto’s.

Here is the study information -

Over the course of 3 weeks, 180 people with Hashimoto’s were randomized to receive the study diet vs. a standard low-calorie diet. 108 patients ate the study diet, while 72 patients served as the control group and followed a low-calorie diet without any food restrictions or guidelines.

Thyroid antibodies (thyroid peroxidase antibodies (TPO antibodies), thyroglobulin antibodies (TG antibodies), and antimicrosomal antibodies), TSH, free T3, free T4 as well as body weight, mass, and composition were measured before the start of the study and after the study ended 3 weeks later in both the study group and the control group.

Here are the results of the study

Get this… after just 21 days, all the patients in the study group showed a significant decrease in the levels of thyroid antibodies, which are known to indicate how aggressive the attack is on the thyroid gland!! (The higher the antibodies, the more aggressive the attack, and I consider a drop of 10% or more an improvement!) This means that their condition was getting better!!
