National Nutrition Month Recipe No. 3

1tbsp canola oil
2 cups old fashioned oats (not quick oats)
1/3cup sweetened flaked coconut
1/3cup chopped pecans
¼ cup honey, agave nectar, or maple syrup
2tbsp brown sugar
½ tsp ground cinnamon
1/3cup dried cherries (or other dried fruit)

Directions:

Heat oil in nonstick skillet over medium heat
Add oats, coconut and pecans
Cook and stir 4-6 minutes until oats are golden brown
Remove mixture to a large sheet pan.

Add honey, brown sugar and cinnamon to skillet.
Cook and stir 1 minute or until bubbling and thickened.

Return oat mixture to skillet and cook 1 minute
or until coated.
Turn off heat.

Stir in cherries, transfer mixture to sheet pan.
Let cool 5-10 minutes.
Store granola in a air tight container.

We enjoyed some or our granola in a yogurt parfait.

National Nutrition Month Recipe #2
Yummy vegetarian chili. This is one of our favorites.

Fantastic Vegetarian Chili
Ingredients
2 Large bell peppers, quartered, seeds and membrane removed.
2 Medium Carrots, chopped
1 Medium Onion, chopped
2 Celery Stalks, Chopped
4oz. Mushrooms (White or baby Bella), roughly chopped
2 Garlic Cloves, chopped
3tbs. Olive or Avocado Oil
2 Cans Fire roasted tomatoes w/garlic
2tbs. Sugar
1/2tsp. Salt
1tsp. Onion Powder
2tsp. Chili Powder
1/4tsp. Cayenne Pepper Powder
1tbs. Lime Juice
2Cans Chili Beans

Garnish:
Cilantro
Sour Cream
Avocado slices
Shredded Cheese

Instructions:
Cut 2 large bell peppers into quarters, remove seeds and membrane. Place on a wire rack and roast in a 400 degree oven for 25 mins. While pepper are roasting, put oil, chopped carrots, onion, celery stalks, mushrooms and garlic into a large soup pot. Saute until veggie are tender.

When peppers are done, place into a food processor along with canned fire roasted tomatoes, sugar, salt, onion powder, cayenne pepper and lime juice. Puree together and pour into the soup pot. Add chili beans including liquid. Return soup to a simmer for 15-20 mins. Serve with garnish of your choosing. I also serve with Cheese Quesadillas. Enjoy!

I love snacks. Especially sweet snacks, but the kind of sweet snack I like isn't always the best for me. I try my hardest to make sure I eat healthy snacks like fruit, but sometimes I need that chocolate fix. Here is a recipe for one of my favorite healthier snacks. The recipe calls for almond butter, but I didn't have any on hand so I used peanut butter instead. I'm sure you could use any nut butter.

Chocolate Coconut Energy Bites

1 ½ cup rolled oats
½ cup ground flax seed
1 tablespoon black chia seeds
1 teaspoon cinnamon
1/3 cup unsweetened coconut flakes
½ cup raw honey
½ cup almond butter
1 teaspoon vanilla extract
½ cup dark chocolate chips

1. Mix all ingredients together in a bowl.
2. Form mixture into approximately 1 inch balls.
3. Cover and refrigerate for about two hours.
4. Enjoy!

Nutrition
Serving size: 1-2 energy balls
Calories: approximately 171
Sugar: 12 grams
Sodium: 4 mg
Fat 10 g
Carbohydrates: 20 g
Fiber: 3 g
Protien: 4 g

In yoga props are used to help the poses meet us where we are. They are used to raise the floor up to meet us, soften a back bend, or support us. However, those beautiful store bought props can be expensive. So what are you to do if you can't afford the fancy commercial props?
Improvise!

Blocks can be used to raise the floor to meet your hands in a forward fold or a lunge. They can be used to support your knees in Butterfly pose or you can sit on a block in easy (cross legged) pose to bring your hips higher and make the pose more comfortable.

There are plenty of household items that can be used as a block substitute, a stack of books maybe wrapped in a towel or tied together to add stability, a waste basket turned upside down, a sturdy box, or a chair.

A word of CAUTION: It is important to keep in mind that whatever items you use for your makeshift blocks, it must provide a safe, and solid foundation to support your weight no matter what pose you use them for. If you can't use the "block" with confidence then you shouldn't use that particular item as a prop.

Props add a sense of confidence to our yoga practice by assisting and helping us modify certain postures that we may have difficulty in getting into or out of. The props help us maintain proper alignment so that we not only get the most out of the pose but we make sure that we do the pose safely so we don't harm ourselves.

In my next post I will go over some potential substitutes for bolsters.

Welcome Friends,

To Jay Bird Yoga.

It is my goal to bring you regular weekly yoga classes through Zoom. My classes will help build strength and flexibility while also providing a sense of peace and tranquility through yoga movement and breath work.

I will be starting to offer regularly scheduled classes in January 2021 so keep an eye on this page and your news feed for class schedule announcements.
