In case you missed it! Here's our healthy Pumpkin Chocolate Chip Cookies 🍪
Ingredients:
- 1 cup canned pumpkin puree
- 1/4 cup maple syrup or honey
- 1/4 cup cinnamon almond butter
- 1 teaspoon vanilla extract
- 2 cups almond flour
- 1/4 cup Rule 1 vanilla protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup Lilly’s “no sugar added” dark chocolate chips
Instructions:
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the pumpkin puree, maple syrup or honey, melted almond butter, and vanilla extract. Mix well until smooth.
3. In a separate bowl, whisk together the almond flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
5. Fold in the dark chocolate chips.
6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
7. Gently flatten each cookie with the back of a spoon.
8. Bake for 12-15 minutes, or until the edges are golden brown.
9. Remove from the oven and let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
10. Enjoy your pumpkin protein chocolate chip cookies!
These cookies are a healthier version of the classic chocolate chip cookies, thanks to the addition of pumpkin puree and protein powder. They make for a delicious and satisfying treat with a boost of protein.

Save this for when you or the kids need something yummy and filling!
Ingredients:
- 4 slices of whole wheat Sara Lee bread
- 4-6 slices of Boar's Head deli meat (or fresh deli meat of choice)
- 6 oz of fat free cheese
- 1 cup tomato soup
- basil and salt to flavor
- 1 scoop unflavored collagen peptides
- Optional: Butter your pan with ghee if you need more fats, otherwise use a light spray of olive oil
Macros:
calories: ~562 (without added fat content)
Protein: 50-54
Carbs: ~78
Fats: ~5-15 (depending on brands used)
