Special order: Strawberry cheesecake with chocolate ganache, macerated strawberries, fresh whipped cream and chocolate covered strawberries!

Special Dessert: back by a customer request! Italian Rainbow Cake ~ traditionally made in the colors of the Italian flag, this version will help us start celebrating 4th of July a little early! Graham crackers crumbs and almonds make up the crust. Amaretto and almond extract give the red, white and blue layers their almond flavor. Topped with a white chocolate ganache and toasted almonds.

Dessert special this week ~ Turtle cheesecake!

Chocolate cookie and pecan crust, topped with a layer of dark chocolate cheesecake and a layer of caramel swirl cheesecake. Over that, a layer of dark chocolate ganache, homemade caramel sauce, glazed pecans and chocolate chips.

Got asked to do some rainbow colored scones for pride month. Green, blue and purple are cherry flavored, while red, yellow and orange are vegan vanilla!

Special Order: Vanilla sprinkle birthday cake with vanilla buttercream and more sprinkles.

Sakura (cherry blossom) cheesecake, my 6” experimental cake, toppped with a white chocolate cherry ganache, cherry whipped cream and Italian amarena cherries.

Dessert Special this week: Torta Paradiso

Torta Paradiso is a sponge cake, crispy on the outside and light inside, with hints of citrus. It has a pastry custard filling with a light lemon flavor. This version is gluten free!

The cake recipe also comes with a fantastic story involving a monk who broke the rules of his strict monastery by wandering in the woods for healing herbs, and speaking to a bride, who taught him how to make this cake. When the monks discovered his transgressions he was apparently sentenced to spend the rest of his days locked in the monastery–baking this cake for them! I love stories like that.

Weekend Special at Stefano’s Trattoria: Torta Caprese

In 1920, in a small pastry shop in the Island of Capri, a chef, Carmine di Fiore, unintentionally created this luscious Neapolitan masterpiece: Torta Caprese, when he was preparing an almond cake for three mobsters who had come to Capri from the US to buy a batch of Al Capone's spats. He was so nervous, he forgot to add the flour and baked it anyway. The the result is a delectable chocolate cake, crisp on the outside and incredibly moist on the inside. The mobsters loved it and asked for the recipe.

Special of the week: Chocolate Panne Cotta!

Hailing from the Piedmont region of Italy, it is traditionally a creamy vanilla dessert that is molded and then plated. Chocolate Panna Cotta is as decadently creamy as the original, but embellished with rich, dark chocolate.
