When it's the holidays, you can bet we are making sweet, malagkit rice!
At Island Pacific, we only use premium grade rice at an affordable price.
Here is a very easy recipe for making malagkit na kanin or sweet, sticky rice.
Soak your Island Pacific Select rice overnight.
The steam using a cheesecloth for at least 25-30 mins on low heat.
Stir together coconut milk, sugar and salt and set aside.
After rice is cooked, mix together your coconut milk mixture and now pair with your favorite fruit!
Perfect for any holiday gaterings!

Here is a recipe that Island Pacific recommends using our new Island Pacific Select Squid Rings!
🍍 Fried Rice with Seafood
1 pineapple
6 cups cooked old rice
3 tablespoons patis or 🐟 sauce
3 tablespoonsπŸ” broth
1 tablespoon curry powder
1 teaspoon sugar
1 onionπŸ§…, chopped
2 cloves garlic, peeled and minced
½ pound large 🍀 peeled and deveined with tails on
1 cup of defrosted Island Pacific Squid Rings
Β½ pound chicken breast, cut into 1-inch strips
Β½ cup unsalted cashews
2 eggs, beaten
1 cup green peas
ΒΌ cup raisins (OPTIONAL)
2 green onions, chopped
salt and pepper to taste

Instructions:

1. Prepare Pineapple by slicing down on one side of pineapple at about Β½ inch thick. Keep leaves for IG picture!
2. Scoop out pineapple and hollow out to put rice in. Make sure to drain and remove any leftover juice. Set aside 1 cup full diced pineapple chunks to be used in recipe.
3. Using hands, separate cold rice then set aside.
4. Combine fish sauce, chicken broth, curry powder, and sugar. Set aside.
5. Prepare wok over high heat with 1 teaspoon oil of choice, Add pineapple chunks and cook, stirring regularly, for about 30 seconds Remove from pan and set aside.
5. Add shrimps and cook, stirring regularly, until color changes. Remove from pan and drain on paper towels.
6. Add about 1 tablespoon of oil to the pan. Add squid rings & chicken and cook, stirring regularly, for about 5 minutes or until lightly browned and cooked through. Remove from pan and set aside.
7. Wipe down the pan as needed. Add about 2 tablespoons oil. Add onions and garlic and cook until softened.
8. Add eggs and cook, stirring regularly, for about 1 minute or until they begin to set but still moist.
Add liquid mixture, stirring regularly.
Add cashews and cook, stirring regularly, for about 30 seconds or until lightly toasted.
10. Add the rice and cook, spreading on the entire cooking surface of the pan, for about 45 seconds or until grains start to sizzle and then toss to redistribute. Repeat a few times until sauce is well distributed.
11. Add green peas and optional raisins. Continue to cook until green peas are heated through.
12. Add the shrimps, squid, chicken, and pineapple. Toss to combine.
13. Add green onions and continue to cook, tossing regularly, for another 1 to 2 minutes or until ingredients are heated through.

To serve, spoon rice into pineapple boats. Garnish with additional raisins and cashews as desired. Serve hot.

Tinolang Baka

Tinola is a traditional Filipino soup usually made with chicken, papaya, or chayote, and siling labuyo chili pepper leaves in a ginger, onion, and fish sauce-flavored broth. It is believed to have originated during the Spanish colonial period in the 1800s as the dish was mentioned in JosΓ© Rizal’s novel, Noli Me Tangere.This variation uses beef instead of chicken. It does take longer to cook but the results are mouth-watering and well worth it! All items can be found at Island Pacific Market.

Ingredients:
2-2.5 lbs beef with bone (I used short ribs)
1 yellow onion, diced
4 garlic cloves, chopped
1 large piece of ginger (approx 50 gm) sliced 
2.2L of water
2 Tbsp of fish sauce
2-3 chayote, peeled, and cut into wedges OR 1/2 green papaya, deseeded, peeled, and cubed
2 stalks of lemongrass (optional)
4-6 chilis 
1 cup of malungay leaves
1 cube or 2 tsp beef boullion 
Salt and black pepper 
1 Tbsp neutral oil
White rice, for serving
Fish sauce, for serving

1. Start by parboiling beef by adding beef to a large stock pan. Fill with enough water to cover the meat, then bring to a boil for 10 minutes.
2. Drain the beef into a colander and rinse the beef to remove any scum. 
3. In a large clean pot, add 1 Tbsp oil, along with ginger and onions over medium-high heat. Saute until aromatic then add in ginger. 
4. Next, add in beef and 2 Tbsp of patis or fish sauce. Mix well and let cook for 2-3 minutes, allowing the meat to render. 
5. Add in water, lemongrass (if using), and beef bouillon. Bring to a boil.
6. Once boiling, reduce to a simmer, then cover and cook until meat is fork tender. Alternatively, you can pressure cook as well! Cooking time will also depend on the type of pot you are using. I cooked mine low and slow for 2 hours! 
7. Once meat is tender to your liking, remove lemongrass, and add in chayote/papaya, and chilis. Cover and cook for 5 minutes or until chayote or papaya are soft. 
8. Add in malungay leaves. 
9. Adjust seasoning to your preference, S&P to taste.
10. Serve with hot white rice and a side of fish sauce. I also like to add some freshly grated ginger on top.

Iced Ube Latte - the perfect blend of rich coffee and sweet, nutty goodness.

1/2 cup white sugar
1/2 cup water
1 tbsp Ube extract

The Silog Series: Longsilog

Welcome to the silog series, a series where every Sunday, I cook up your favorite silog meals and share a little history behind them. Today’s menu? Longsilog. 

Silog is a Filipino breakfast composed of three parts: sinangag or garlic fried rice, itlog aka fried egg, plus the addition of a type of protein. Longsilog is made with longganisa, a type of sausage that is both rich in flavor and history.

Longganisa originated in the 16th century when Spanish settlers introduced pork sausages to the Philippines. The locals embraced this new food and started creating their own versions of it by using local ingredients such as garlic, vinegar, and spices to give the sausages a distinctive taste. Over time, it has evolved into various regional recipes, ranging from sweet to spicy, to garlicky and sour. It’s become a symbol of Filipino culture and one of my favorite meals in the entire world.

This meal was bought entirely at Island Pacific. I bought the sweet, spicy, and garlic longanisas.

Sinangag:
4 cups day old rice
12 cloves of garlic, minced 
1 tsp garlic salt
Fried garlic bits 
Neutral oil

Heat oil in a skillet, add in garlic and cook until browned but not burnt. Push garlic to the side and add rice. Mix well thoroughly, breaking apart rice and fry until done. Add in fried garlic as desired. 

Ensaladang manga:
1 mango, cubed 
2 Roma tomatoes, diced
1/4 red onion, minced
2 sprigs of green onion, sliced 
1/2-1 Tbsp bagoong guisado 

Combine all ingredients together. Salt and pepper to taste. 

Longganisa: 
Pierce each sausage with a fork. Add to pan over medium high heat. Add in enough water to cover sausage 3/4 of the way. Bring to a boil. Reduce to medium heat, cover and cook until water is almost evaporated and oils come out, turning halfway.
