Directions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat butter and sugar until light and fluffy. Add egg and vanilla extract, beating until well combined.

Directions:

Crispy Air Fryer Onion Rings
Ingredients:
2 large onions
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 large eggs
1 cup buttermilk
2 cups panko breadcrumbs
Cooking spray
Directions:
Preheat your air fryer to 375°F (190°C).
Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set aside.
In a bowl, combine the flour, baking powder, salt, black pepper, and paprika.
In another bowl, whisk together the eggs and buttermilk.
Place the panko breadcrumbs in a third bowl.
Dredge each onion ring in the flour mixture, then dip into the egg mixture, and finally coat with panko breadcrumbs, pressing gently to adhere.
Arrange the coated onion rings in a single layer in the air fryer basket, making sure they do not overlap. Spray lightly with cooking spray.
Air fry for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Repeat with remaining onion rings.

Crispy Potatoes with Spicy Tomato Sauce
Ingredients:
4 large potatoes
1/4 cup olive oil
Salt to taste
For the sauce:
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (adjust to taste)
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C).
Peel the potatoes and cut them into small cubes.
Toss the potato cubes with olive oil and spread them in a single layer on a baking sheet.
Bake for 30-35 minutes, or until potatoes are crispy and golden brown, flipping them halfway through for even cooking.
While the potatoes are baking, prepare the sauce. Heat olive oil in a saucepan over medium heat.
Add the chopped onion and garlic, sauté until softened.
Add the diced tomatoes, smoked paprika, cayenne pepper, salt, and pepper. Simmer for 15-20 minutes until the sauce thickens slightly.
Once the potatoes are done, transfer them to a serving dish and drizzle with the spicy tomato sauce.
Garnish with chopped fresh parsley before serving.
