1 year ago today Viejo that you left me in the physical but ascended in my heart in spirit. Today has been quite a day of processing but one thing I am so grateful for is the relationship I have with you now. Your soul and spirit shines so bright Papí that it makes me cry and smile at the same time. The way I feel your love now is so pure, without the ways of the world getting in the way. I LOVE you more than words can ever describe and thank you for never leaving my side. I love you Daddy. Until we see each other again Viejo never let go of my hand. ❤️

Breakfast or Snack Cookie Bars

2 1/4 cups of spelt flakes or rolled oats
1 cup of medjool dates
1/2 cup of creamy peanut butter
3 tbsp of date syrup
2 tsp of vanilla extract
1/2 tsp of sea salt (no salt if PB is salted )
Optional fresh strawberries, raspberries or blueberries

Strawberry Jam
2 cups of strawberries
1 tablespoon of lemon juice
1/4 cup of date syrup

Instructions to make the bars:
* Blend spelt flakes or rolled oats in food processor until it turns into powder form
* Now add real creamy peanut butter, medjool dates, date syrup, vanilla extract and sea salt
* Blend it all together in the food processor
* Place parchment paper in a 8x8 or 9x9 brad pan
* Fill pan with dough mix. Press down with hand until it’s flat.
* Place in the freezer for 30min
* Take out and spread jam on top
* Place in freezer for 10min
* (Optional) Place fresh fruit on top
* Place I freezer for another 5 minutes and cut it up into 1 inch slices and ENJOY!

Strawberry jam instructions
* Place strawberries into a food processor Pulse about 10times until consistency is slightly chunky
* Transfer into a saucepan, add lemo. Juice and date syrup. Bring to a light boil on medium heat.
* Cook for 10-12 minutes, stirring often so it doesn’t burn.
* Once it’s reached a jam texture, remove from heat and let cool
* Pour into a jar and store in refrigerator
