When you have an overripe banana or two, you try your best to make good use of it if you're into baking. This *healthy* vegan banana blueberry oat bread was a great yummy way for me to use up a couple of overripe bananas that I had on hand.. (This simple easy recipe is by ).
Some of the ingredients included: old fashioned oats, spelt flour, your choice of sugar (I used organic coconut sugar), a couple of ripe bananas, and fresh blueberries (or you can use frozen).
