2 packages of unsalted Barùkas Nuts
Water
✳️ Preparation ✳️
Remove the Barùkas nuts skin.
Put the nuts under water for at least 8 hours.
Drain the water
Put the Barùkas nuts in a blender and add enough water to cover the nuts.
Strain the nut milk.
Sweeten, if desired.

❓Q: What classifies Barukas as having a low water footprint?
❗A: Nearly all crops use diverted irrigation to supply their water needs, especially most common nuts, since they are grown in water deprived areas where the water needs are excessive. Barùkas nuts (called baru nuts or baru seeds in Brazil) only use rainwater for irrigation and very little water is used during the processing so the overall water footprint for baru nut is very low. 💦

Saturated fat is a type of fat with carbon atoms that have single bonds between their fatty acid chains. It's found naturally in many foods, especially animal products like meat and dairy, as well as tropical fats like coconut and palm. 🌴
The American Heart Association recommends limiting saturated fats. Decades of sound science has proven it can raise your “bad” cholesterol and put you at higher risk for heart disease ♥️
The USDA recommends no more than 30g of saturated fat a day for men and for women, it’s under 20g per day.

✳️ Ingredients ✳️
1 cup dry chickpeas - soaked for at least 12 hours (ideally 24 hours)
100g Barùkas nuts
1 raw garlic
1 bundle of parsley
1 bundle of chives
100g of chickpea flour
2 tablespoons extra virgin olive oil
Salt to taste
✳️ How to prepare ✳️
Chickpeas are not cooked, they are soaked and placed in the multiprocessor along with the rest of the ingredients, except the chickpea flour.
Ingredients should be homogenous roughly 4-5 minutes.
Remove and add to a large container.
Add the chickpea flour and mix well.
Grab a small ball.
If it falls apart easily add more chickpea flour, if it's too dry add a bit of water.
Put extra virgin olive oil in a large pan, place the falafels on the pan, and bake at 390 degrees for 20-25 minutes.

1 Full fat canned coconut milk
4 TBSP cacao powder

Large cucumber - as big as possible - peeled and hollowed out
1 fresh avocado
Lime juice
Medium to small red pepper
Sliced dates
Diced tomatoes
Sliced sun-dried tomato
Sliced arugula - several leaves
Roasted garlic
A handful of Barùkas
✳️ Preparation ✳️
Remove the cucumber seeds to make way for the vegetable Barukas mixture.
Slice the avocado and add lime juice to make guacamole.
Mix the red pepper, dates, diced tomatoes, sun-dried tomatoes, arugula leaves, roasted garlic, and Barùkas into the guacamole.
Put the mix on top of your cucumber and enjoy! 🥒

We started our own version of this old classic, using baru nuts, providing a that is not only amazing (Anything the other nut butters can do, Barùkas can do better) 😋 but also highly beneficial for you, your loved ones and just as important to the benefit of the environment. 🌎
We use extra virgin organic cold pressed coconut oil, since Barukas baru nuts are not as high in lipids as other nuts. Coconut oil is a good source of caprylic acid which the body uses in combination with sulfur containing amino acids cysteine and methionine as well as pantothenic acid (B5) all of these presents in the Barukas baru nuts to create Alpha Lipoic Acid.
Alpha Lipoic acid (ALA) functions are various, which include but not limited to synthesis of nucleic acids, amino acid metabolism, antioxidant effect, enhance glucose cellular uptake, and heavy metal damage control in cells.

4 frozen bananas
1/2 cup cacao powder
1/4 cup of milk of your choice
Handful Barùkas nuts
Barùkas butter
3 scoops of coconut cream
Optional: 1 scoop of your favorite protein powder
✳️ Preparation ✳️
Place the frozen bananas, cacao powder, almond butter, and protein powder (if you're using some) in a high-speed blender.
Blend at high speed and use a plunger to keep pushing down.
Ice cream will start blending smoothly after 2-3 minutes.
Top with Barukas and any other toppings of your choice! 🥳
