Simple photo taken of my new love……green olives! Until about six months ago I was incapable of eating whole olives. I liked them as tapenade, sliced in a pizza or in a salad, yet unable to put a whole one in my mouth to eat. Now I love them as a snack!
Happy Thanksgiving to everyone. I’m grateful to have made it through another year of pandemic with my family and friends.
I’ve also been enjoying working as a chef, which helped make this Thanksgiving prep a lot less stressful.
This healthy and balanced dish came from the fabulous cookbook by It starts with a bottom layer of green beans, topped with slices of poached chicken breast, and topped with a salsa consisting of chopped herbs, tomatoes and olives. I served this dish with slightly roasted potatoes.
Shrimp tacos with a cabbage slaw, guacamole and cheese on top. Would you like some?
Shepherd’s Pie, Cottage Pie or Hachis Parmentier, whatever you call it, it’s pure comfort food and yummyness in your tummy.
This is a wonderful way to use leftovers. In this dish, the bottom layer is made of ground beef (thus cottage pie) with tomato paste, carrots and celery. The second layer is cooked spinach lightly seasoned. And the top is mashed potatoes with a little Parmesan cheese grated on top.
Chicken Stir Fry served over rice is always a good way to get a balanced meal consisting of protein, veggies and grains, especially when you use brown rice.
Jicama Chicken Tacos are such a low-carb alternative of an all-time classic favorite!
This taco has some cabbage slaw, grated cheese and guacamole inside along with the shredded chicken.
It’s also a great way to practice your knife skills to slice the jicama into ultra-thin slices to use as the shell. Otherwise you can use a wide mandoline or slicer.
Chinese Chicken Salad made for my family at home. Everyone enjoyed this simple dish. A wonderful one-bowl meal when hosting friends and family.
The flavors are fresh, tangy and slightly sweet. A great dish for practicing your knife skills.
This is a low carb version without any fried wonton sticks or other rice products added.
