Perfect for your packed teacher lunch or a delicious dinner after a long day of teaching 🥜🍛🇵🇭 Ingredients: Oil for cooking 10 cloves of minced garlic 2 small chopped yellow onions Fried tofu 1 Handful of string beans 1 handful of bok choy 2 Chinese eggplants 2 King oyster mushrooms (optional) 1 cup of chunky peanut butter 2 cups of vegetable stock 1/2 a vegetable stock cube 1 tsp of sugar 1 tsp annatto powder Soy sauce & pepper to taste 1 tbsp cornstarch + 3 tbsp water Serve with green onions and white rice!
