Why aren’t all Asian restaurants 100% gluten-free?
Many Asian restaurants may have naturally gluten-free dishes, but transitioning to a 100% gluten-free menu requires significant changes in ingredients and preparation methods. Some restaurants use cost-effective ingredients that happen to be gluten-free, but going 100% gluten-free requires a significant overhaul in ingredients and preparation methods. It’s a commitment that many restaurants haven’t undertaken due to the cost or complexity involved.
Where is gluten found in Asian ingredients?
Gluten is primarily found in sauces, such as soy sauce and premixed bottled sauces, as well as in flours and batters used for frying. Gluten-free alternatives can be more expensive, often costing twice as much, or they need to be made from scratch, which requires more time and resources.

Why is FORK included going gluten-free?
After operating for over three years at 176 University Ave., Lowell, MA, and facing challenges due to our location, we needed a way to stand out. Then, one day, we found our calling.
One of our guests expressed a need for more Asian restaurants offering trusted gluten-free options. This inspired us to transition our entire menu to gluten-free. Growing up in a Cambodian household, many of our meals were naturally gluten-free, so the shift felt natural. This change allows us to cater to dietary needs while preserving the authentic flavors we love.
Our goal is to become a certified gluten-free scratch kitchen.

Join us for a carefully curated Gluten-Free Asian Fusion Menu crafted for those who love the vibrant flavors of Asia while avoiding gluten. From savory appetizers to mouthwatering main courses and refreshing dessert, each dish showcases the richness of Asian cuisine without compromise. We’ll have plenty of food for everyone to enjoy, but seats are limited.
Please book your reservation by Friday, October 11, 2024. Since we are a husband-and-wife team, we need time to shop for ingredients and prepare this special menu based on input from our guests.
Seating is limited, and our cozy space accommodates up to 18 guests per session. Tables will be shared with other guests. Most importantly, be on time!

It’s Been a Roller Coaster 🎢
The past couple of weeks have been an emotional roller coaster for us, with a lot on our plates. We’re behind on operating costs to keep FORK included open and are desperately hoping for a break.
We’ve been pushing hard on our crowdfunding campaign, but we’re worried we might not reach our goal. The support we’ve received so far has meant the world to us, and we’re hopeful that, together, we can still make it.
We are doing everything we can to keep our 2nd Gluten-Free Night this Saturday, 9/28/24, as planned. If we can’t, we’ll personally reach out to those who’ve made reservations.
Please be patient with us as we continue to fight to keep FORK included alive.

Dishing Out Memories:
The most ordered item… Chance’s Fried Rice
One bite keeps you coming back for more.
This side dish wasn’t even supposed to make it to the menu… but here we are.
We didn’t want to add a simple dish like fried rice or lo mein. But if we’re going to do it, we’re doing it the FORK in way!
Named after our son, Chance, this dish reflects the love and care we put into every meal—the same fried rice we make for him at home. It’s a simple yet flavorful combination of jasmine rice, fresh vegetables (not in the original recipe), egg, and savory Chinese sausage, all stir-fried to perfection. Our not-so-secret ingredient? Maggi Premium Soy Sauce—retailing at over $20 a bottle, it adds that extra depth of flavor, along with a touch of sugar, roasted garlic, salt, and pepper. Made to order in small batches, it’s the most labor-intensive and costly dish on our menu, but we’ve priced it as a loss leader so everyone can enjoy it.
(Heads up: This dish can’t be made gluten-free due to the soy sauce!)
Chance’s Fried Rice is a tribute to family, love, and the joy of shared moments around the table. Comforting, delicious, and always memorable.
