We are thrilled and honored that our Tropical T taco has been named one of the top 69 tacos in LA by **LA Taco**. Our vision for the Tropical T was to create a refreshing, unique taco experience, which is why we serve it on a handcrafted jicama tortilla, topped with fresh pico de gallo and mango. The coconut-fried shrimp adds a delightful balance of warmth and freshness to each bite. Thank you, , for recognizing our creation!

As a first generation Mexican American, I’ve been inspired to innovate on traditional Mexican cuisine by creating a new take on the quesadilla. My idea is an open face quesadilla that can be enjoyed with a fork and knife or folded and eaten like a giant taco. This twist on a classic dish reflects my creativity and cultural background, allowing me to reimagine something familiar. While some may argue that my restaurant, Balam, doesn’t serve traditional Mexican food, I believe it embodies Mexican cuisine in its own unique way, blending tradition with modern influences.
