Easy sheet pan dinner!
7 ounces orange roughy
6 ounces potatoes
3 ounces mushrooms
5 ounces broccoli
1 tbsp avocado oil

Cajun seasoned wild Pacific cod paired with roasted potatoes topped with grated parmesan. Tossed on a sheet pan and cooked in convection oven. If you have a large toaster oven style air fryer, this would work well in that!
Turkey sun dried tomato egg bites for breakfast today, I meal prep several dozen of these at a time and freeze to take out for the week. Makes breakfast easy when I’m short on time in the morning. And they’re low calorie and high in protein, great way to get my protein in early. Recipe is up on the blog and preloaded into MFP.
I’ve been experimenting with adding some pre/post workout carbs coming off a lower carb day since I work out on empty in the morning. I love overnight oats but needed to bulk them up a bit to get more protein and also reduce the carbs down a little until I’m back into maintenance/performance mode and have more carbs to work with again.
These hit the spot, they’re a little tangy from the Greek yogurt but I’ve grown used to having a lot less added sugar in my meals. You could easily swap in a flavored yogurt or add some more sweetness. Powdered protein added some flavor and protein as well.
What I ate today - low day (aka low carb day ~59-69g) day in fat loss cycle. Halfway done! Still love ok’ing forward to reversing out and getting back to having second breakfast again 😂 my favorite part about low days? Knowing a high or super day follows it 🤤🙌🏻😮💨
Taco bowl for dinner…and there’s even rice hiding under there despite it being a medium day 3 weeks into a fatloss cycle. Halfway there. There’s always room for rice…and tacos.
93% lean turkey and jalapeños seasoned with cumin, paprika, salt and garlic powder, served over rice, topped with reduced fat shredded cheese, tomatoes, avocado and Greek yogurt.

BFD…or Breakfast For Dinner, is a BFD in my house ❤️ giant omelette with a sautéed mixture of ground turkey (half 93/7 and half 99/1) cooked with smoked paprika, garlic powder, mushrooms, reduced fat cheese, and smoked sun dried tomatoes. Paired up with air fried potatoes with avocado oil. So good!

Sous vide vs air fryer…just kidding, let’s use both! I don’t know if I can technically call this a quick dinner since it cooks for 2.5 hours in the air fryer, but actual “active” cooking/prep time is only 15 minutes.
I sliced a lean, sirloin pork roast. Seasoned with chili powder, garlic powder and onion powder. Vacuumed sealed and sous vide for 2.5 hours at 140 degrees.
When finished, a quick sear in a pan while some mushrooms and broccoli tossed with avocado oil hit the air fryer for 10 mins at 375. Add all together and toss with a serving of Kevin’s Natural’s Thai Coconut sauce…such an easy way to add a huge punch of flavor using clean ingredients. Plenty of extra pork leftover for some other fun creations or a nice variation to replace my chicken on salad this week.
Will definitely make this again soon!

Simple lunch today, ready in a few minutes. Sous vide sirloin on low cal, high fiber bread toasted with a little butter. Paired with tomatoes, feta and balsamic.
A friend recommended reading Atlas if the Heart. Im 2 chapters in and loving it so far. Chapter 2 talks about comparison, admiration, reverence, envy, jealousy, resentment, schadenfreude and Freudenfreude.
This chapter spoke to me, in the health and fitness community you see this a lot…in positive and negative ways. It’s easy to get caught up in comparing your journey with others.
Absolutely in love with this table. I was looking for a space saving option but also something that would work well for when I want to entertain and need a larger table. This is perfect!
