These broccoli quinoa burgers are packed with nutritious ingredients and can be customized with your favorite toppings and condiments. They make a delicious and satisfying plant-based meal option.

Ingredients:
1 ½ cups cooked quinoa
2 cups broccoli florets, steamed and finely chopped
1 small onion, finely chopped
3 cloves garlic, minced
½ cup breadcrumbs (gluten-free if desired)
¼ cup nutritional yeast
2 tablespoons ground flaxseed mixed with 5 tablespoons water (flax egg)
1 tablespoon soy sauce or tamari
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Olive oil (for cooking)
Optional toppings:

Whole wheat burger buns
Lettuce leaves
Sliced tomatoes
Avocado slices
Vegan mayo or any desired sauce
Instructions:

In a large mixing bowl, combine the cooked quinoa, chopped broccoli, onion, minced garlic, breadcrumbs, nutritional yeast, flax egg, soy sauce or tamari, ground cumin, paprika, salt, and pepper. Mix well until all the ingredients are evenly combined.

Let the mixture sit for about 10-15 minutes to allow the flax egg to bind the ingredients together.

Shape the mixture into patties, approximately 1/2 to 3/4 inch thick. The mixture should make about 6 burgers.

Heat a skillet over medium heat and add a drizzle of olive oil. Place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.

If desired, lightly toast the burger buns.

Assemble the burgers by placing a broccoli quinoa patty on the bottom half of each bun. Add lettuce leaves, sliced tomatoes, avocado slices, and any desired sauce or condiments on top of the patty. Cover with the top half of the bun.

Serve the broccoli quinoa burgers while still warm and enjoy!

These blueberry ice cream popsicles are a delightful treat on a hot day. They are bursting with the natural sweetness of blueberries and offer a creamy and satisfying texture. Feel free to experiment with other fruits or add-ins to customize the recipe to your taste. Enjoy!

Ingredients:
2 cups fresh or frozen blueberries
1 cup Greek yogurt or coconut milk yogurt (for a dairy-free option)
1/4 cup honey or maple syrup (adjust according to sweetness preference)
1 teaspoon vanilla extract
Zest of 1 lemon (optional)
Instructions:

In a blender or food processor, puree the blueberries until smooth. If using frozen blueberries, allow them to thaw slightly before blending.

In a mixing bowl, combine the blueberry puree, Greek yogurt or coconut milk yogurt, honey or maple syrup, vanilla extract, and lemon zest (if using). Stir well until all the ingredients are thoroughly combined.

Pour the mixture into popsicle molds, leaving a small space at the top for expansion. If you don't have popsicle molds, you can use small paper cups and insert wooden popsicle sticks into the center.

Place the popsicle molds in the freezer and let them freeze for about 30 minutes. Then, insert the popsicle sticks into the center of each mold.

Continue freezing the popsicles for at least 4-6 hours or until completely frozen.

To remove the popsicles from the molds, run warm water over the molds for a few seconds to loosen them. Gently pull on the popsicle sticks to release the popsicles.

Serve and enjoy the refreshing blueberry ice cream popsicles immediately, or store them in an airtight container or freezer bags for later enjoyment.

These chicken, tomato, cucumber, and parsley tortilla wraps are delicious for a quick and satisfying meal. They can be enjoyed as a lunch or dinner option, and the sauce adds a tangy and refreshing flavor to the wrap. Feel free to customize the ingredients or adjust the quantities to suit your taste preferences. Enjoy!

Ingredients:
2 large tortilla wraps (gluten-free if desired)
1 cooked chicken breast, thinly sliced
1 medium tomato, sliced
1/2 cucumber, sliced
A handful of fresh parsley leaves
For the sauce:
1/4 cup Greek yogurt (or mayo or a dairy-free alternative)
1 tablespoon lemon juice
1 tablespoon chopped fresh parsley
Salt and pepper to taste
Instructions:

In a small bowl, mix together the Greek yogurt (or mayo or dairy-free alternative), lemon juice, chopped fresh parsley, salt, and pepper to make the sauce. Set aside.

Lay the tortilla wraps flat on a clean surface.

Spread a generous amount of the sauce evenly over the wraps.

Place the sliced chicken breast on top of the sauce, followed by the tomato slices, cucumber slices, and fresh parsley leaves.

Fold the sides of the tortilla wraps inward, then tightly roll them up from the bottom to create a wrap.

Slice the wraps diagonally into halves or into smaller portions, if desired.

Serve the tortilla wraps immediately or wrap them tightly in foil for later consumption.
