Vegan food is fantastic! This week all meals are plant-based 🪴. Nutrient dense, real food, real fast! Healthy immune system originate in the gut, adding in vibrant and colorful foods will positively effect your overall health.
I love this White Bean Hummus with Orange Zest ~ light, and creamy and touch fresh orange natural sweetness.
Easy as 1-2-3!
In food processor mix 1 can white beans (rinsed), zest of 1 large orange, 1/3 cup orange juice, salt, pepper. Mix until creamy.
Slowly add 1/3 cup olive oil, 6 tablespoons of tahini. Mix. Sprinkle with red pepper flakes and sesame seeds.
Here I toasted Ezekiel tortillas. Rice crackers are perfect option too.

Day 7 of 9 DAYS OF HOLIDAY HEALTH
This Lemony Carrot Soup is bright, healthy and delicious! The creamy base of the soup comes purely from the pureed carrots and cauliflower. The addition of miso paste and crushed coriander to the broth, and fresh lemon and cilantro at the end, adds a zing.

Being in a relationship with Denmark has really shown me how to stop being such a frantic busy-bee all day everyday ~ relax and practice “hygge” a feeling if contentment.
Day 5 of 9 DAYS OF HOLIDAY HEALTH
Pomegranates get a little more glory this time of year and I fully support it. They are a powerhouse of polyphenols and something I use intentionally to support the good gut bacteria Akkermansia muciniphila, which encourages healing and integrity of the gut lining.
I have this smoothie on repeat! This creamy blend of frozen zucchini, spinach, ginger, and cinnamon is elevated with a swirl of tangy pomegranate juice. A little goes a long way, so just one tablespoon provides plenty of beneficial phytonutrients and sweetness.
This is a great smoothie to add into your rotation for improved gut health and longevity with some classic fall flavors.

to-do list and find one small way to relax. You will find a mini-recharge to seize the day!
Day 2 in my 9 Days of Holiday Health is baking Gingerbread Snacking Cake. For me, baking is therapeutic and creative. Every year I adapt gingerbread recipe. So moist and you can taste all the warming spices mixed in rich molasses. Comes together in 20 minutes. This recipe will become your new holiday baking tradition.

I didn’t even make it one week into the New Year detox without a cookie 🙈these healthyish Overnight Oatmeal Breakfast cookies won me over. I added a teaspoon of almond butter for protein and sugar balance and felt energized. I made healthy swaps and cut out white sugar. Leaving dough in refrigerator overnight was the key to amazing texture and flavor. Recipe
