Try DETOX SOUP 🥣 Mung beans are a favorite in TCM and Ayurveda as a helpful ingredient in detoxifying soups, like kitchari. They are a source of minerals and are high in protein. This basic soup recipe can be modified using seasonal vegetables and adapted to personal preferences.
• 2 cups of vegetable or meat broth
• Meat – cooked (optional)
• 1 cup dried mung beans or lentils
• 1 cup of diced vegetables,
in any combination: onions, carrots, celery, zucchini, turnips, parsnips, and spinach
• 1⁄2 cup of uncooked rice
• 1 tsp of herbs and spices, or more, to taste, in any combination: rosemary, basil, oregano, thyme, cumin, turmeric, ground fennel, ground black pepper, red pepper flakes, etc.
• Sea salt, to taste (optional)
Bring broth to a boil. Add diced vegetables, rice, and seasonings to taste. (If using brown rice, simmer for about 20 minutes before adding the raw vegetables). Add water, if needed, as broth evaporates. When vegetables and rice are tender (about 20 minutes), add cooked meat, if desired.
This recipe makes one large or two smaller servings. If you modify the proportions, use at least four times as much liquid as raw rice. Enjoy!
